Quick and Easy Bibingka

Preheat oven to 375° F. While preheating the oven, brush butter onto the banana leaves
- 1 tablespoon baking powder
- 6 pieces banana leaves, round shape; about 9 inches in diameter
- 1/2 cup butter
- 1 1/2 cup coconut milk
- 3 eggs
- 1/2 cup sticky rice flour
- 2 cups rice flour
- 1 piece salted egg, cut into wedges
- 1 cup sugar
- For Bibingka Toppings
- 1 tablespoon butter
- 1 tablespoon cheese, cheddar cheese or Edam cheese
- 1 tablespoon grated coconut
- 1 tablespoon sugar
Cassava cake (firm version)

1. In a large mixing bowl combine all Cassava Cake ingredients; mix thoroughly until even in consistency

- 1 kg grated cassava
- 1 1/2 large can coconut milk
- 1 large can evaporated milk
- 1/2 can condensed milk
- 2 eggs, beaten
- 1/2 cup butter, melted
- 1/2 cup grated cheddar cheese
- 1 cup brown sugar
- 1 bottle macapuno (Coconut Sport)
- Ingredients (Topping)
- 1/2 large can coconut milk
- 1/2 can condensed milk
- 2 tbsp flour
- 2 tbsp sugar
- 2 egg yolks, beaten

1. In a wok medium heat, mix all ingredients together thoroughly

- 3 ounces a bubble tea powdered "Instant Mixes"
- 3 ounces of Cream Base "Coffee Mate"
- 3/4 cup of warm "Black Tea/Red Tea" and stir to dissolve the powder.
- 1 cup of Crushed Ice
- 1 scoop of cooked Bubble Tea "Tapioca Pearls" in a serving cup.
Shrimp Fried Rice

Heat 2 tablespoons oil over medium-high heat in a large, nonstick skillet or wok
- 8 ounces shrimp, peeled and deveined
- 3 tablespoons peanut oil
- 2 garlic cloves, finely chopped
- 2 eggs, lightly beaten
- 3 green onions, chopped
- 1/4 cup chopped seeded red bell pepper
- 1/4 cup chopped seeded green bell pepper
- 3/4 cup frozen peas, defrosted
- 3/4 cup bean sprouts
- 3 cups cold cooked rice
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon sesame oil
- Salt to taste

Spanish Bread

How to bake Spanish Bread using Manual / Traditional method: Dissolve yeast in warm water (110-115 degrees F)
- 3 cups bread flour
- 1- 1 1/2 cups all purpose flour
- 1/2 cup sugar
- 1 tsp salt
- 1 pouch rapid rise yeast
- 3 egg yolks
- 3/4 cups evaporated milk or fresh milk
- ( I used fresh milk )
- 1/2 cup melted butter
- 1/2 cup water
- extra flour for kneading
- 1/3 cup softened butter
- 1/4 cup brown sugar
- 1/3 cup bread crumbs
- 1/4 tsp vanilla
- combine filling ingredients together
Salmon Pasta Dish

Cook your choice of capellini pasta according to package instruction
- 8 ozs capellini pasta
- 1.5 - 2 lbs salmon cut in chunks
- 1 shallot minced
- 2 garlic cloves minced
- 4 tablespoons olive oil
- 3 tablespoon butter
- 3/4 cup white wine
- 1/3 cup heavy whipping cream
- 1 teaspoon red pepper flakes (optional)
- 4-5 basil leaves chopped
- salt and pepper
- grated parmesan cheese
- lemon slices for serving
Sweet and Sour Pork

Cut the pork tenderloin into pieces and marinate with the ingredients for 15-20 minutes
- Marinate:
- 1/2 lb. pork tenderloin (cut into bite size pieces)
- 1/2 green bell pepper (about 2 oz. and cut into pieces)
- 1/2 red bell pepper (about 2 oz. and cut into pieces)
- 2 stalks scallions (only the white part, cut into 2 inch length)
- 1 piece fresh/canned pineapple ring (cut into small pieces)
- 1 clove garlic (finely chopped) Oil for frying.
- 1 teaspoon soy sauce
- 1/2 teaspoon corn flour
- 1/2 teaspoon rice wine
- Frying Batter:
- 1/2 cup water 2 oz. all-purpose flour
- 1 oz. corn starch
- 1/2 teaspoon baking soda
- 1/2 egg
- 1 teaspoon cooking oil
- 1 small pinch of salt
- Sweet and Sour Sauce:
- 1 1/2 tablespoons tomato ketchup
- 1 teaspoon plum sauce
- 1/8 teaspoon Chinese rice vinegar (transparent in color)
- 1/2 teaspoon Lea & Perrins Worcestershire Sauce
- 1 teaspoon oyster sauce
- 1 teaspoon corn starch 1 teaspoon sugar
- 2 tablespoons water
