Ube Macapuno Chiffon Cake

Preheat your oven to 350F
- Chiffon Ingredients: (for one layer only)
- 1 cup cake flour
- 2/3 cup sugar, divided (1/2c + 1/8c)
- 1 tsp. baking powder
- 1/4 tsp. salt
- 4 large eggs, separated
- 1/4 cup oil
- 1/4 cup milk
- 1 tbsp. clear ube extract
- violet food coloring (adjust color as desired)
- Frosting: (for one layer only)
- 1 1/2 cups whipped cream
- 2/3 cup powdered sugar
- 2 tsp. clear ube extract
- violet food color (adjust color as desired)
- or
- 1 box (200g) Frosty Powder Whip Cream, whipped
- 2 tsp. ube flavoring
- violet food color (adjust color as desired)
- Filling: (for one layer only)
- 1/2 cup ube halaya or store bought ube fudge
- 1/2 cup macapuno strings
- violet sprinkles or ube cake crumbs, for decorating

Place the ground pork in a large container Add the bread crumbs then break the raw eggs and add it in
- 2 lbs. ground pork
- 12 pieces vienna sausage or 6 pcs hotdogs, cut in half lengthwise
- 3 hard boiled eggs, sliced

- 1/2 cup tomato sauce
- 2 raw eggs
- 2 cups cheddar cheese, grated
- 1 cup red bell pepper, minced

- 2 cups bread crumbs (made by placing 4 slices of tasty bread in a food processor. If not using any food processor, just tear the bread.)
Beef stroganoff

Brown ground beef in large skillet; add onions, garlic and mushrooms
- •2 pounds lean ground beef
- •1 cup chopped onion
- •2 cloves garlic,minced
- •1 small can sliced mushrooms,drained
- •2 1/2 teaspoons salt
- •1/4 teaspoon pepper
- •1 cup beef broth
- •3 tablespoon tomato paste
- •1 1/2 cup sour cream, mixed with 4 tablespoons flour
Buko Pandan w/ Macapuno

DIRECTIONS On a caserole, boil 4 cups of water and add the Pandan Leaves or the pandan flavor syrup
- 5 Young Buko/Coconut
- 2 packs of Green Gelatin
- 1 can (325gms) of Condensed Milk
- 1 can (325gms) of Nestle Whip Cream
- Pandan Leaves or Pandan flavor Syrup
- 1 bottle (250gms) of Macapuno
Ube Halaya

- 1 lb. boiled purple yam, grated, shredded, or mashed
- 14 ounces condensed milk (about 1 can)
- 1 teaspoon vanilla extract
- 1/4 cup butter

- 1/2 pound chicken breast (cut into bite-size cubes)
- 5 dried red chilies (cut into 1.5 inch length, seeded and soaked in warm water)
- 1 teaspoon minced orange zest
- 2 cloves garlic (minced)
- 1 inch ginger (minced)
- 1 stalk scallion (use the white part only, cut into thin threads for garnishing)
- 2 teaspoons oil
- Oil for deep frying
- Orange Sauce:
- 1/4 cup freshly-squeezed orange juice
- 3 tablespoons canned chicken broth
- 1 tablespoon soy sauce
- 2 teaspoons Chinese rice wine or dry sherry
- 1/2 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 5 teaspoons sugar
- 1/8 teaspoon white pepper powder
- 1 teaspoon corn starch
- Salt to taste
- Frying Batter:
- 1/2 cup water
- 2 oz. all-purpose flour
- 1 oz. corn starch
- 1/2 teaspoon baking soda
- 1/2 egg
- 1 teaspoon cooking oil
- 1 small pinch of salt
