Bill Knapp's Chicken Marinade

Mix all together in a blender and let chicken set over night in fridge
- 1/2 cup Honey
- 1/2 C. Apple juice
- 2 teaspoons Garlic Powder
- 1/2 teaspoon ground Ginger
- 2/3 C. Soy Sauce
- 1/2 C. Cider vinegar
- 2/3 C. Vegetable. oil
Chicken Fingers with Barbecue Sauce 4pts

Preheat oven to 450ºF. Place a large baking sheet in the oven to preheat
- 2 tablespoons honey mustard
- 2 tablespoons buttermilk
- 1/2 cup dried bread crumbs, I used seasoned bread crumbs mixed with some panko bread crumbs
- 1 lb. uncooked boneless, skinless chicken breast, cut into 12 equal strips
- 6 tablespoons barbecue sauce, hickory-flavored preferred
Chili Casserole with Cornbread

1. Heat oven to 400 degrees
- 1 lb. extra lean ground beef
- 16 ounces Thich 'n Chunky Salsa
- 15 1/2 ounces red kidney beans, drained
- 1 can diced tomatoes, (14 1/2 ounces)
- undrained
- 1 1/2 cups frozen corn kernels
- 3 teaspoons chili powder
- 1 teaspoon cumin
- 1 package cornbread mix, (6.5 to 8.5 oz.)
- milk
- margarine, if needed by mix
- egg, if needed by mix
- 1/3 cup shredded cheddar cheese
- 1 tablespoon green onion, sliced
Garlic Parmesan Egg Noodles

1. Cook noodles according to package instructions
- 2 c uncooked egg noodles
- 1/3 c sliced carrots
- 1/4 c chopped onions
- 1 c snow peas
- 2 T butter
- garlic salt, to taste
- a pinch or less of black pepper
- 1/4 c grated parmesan cheese
Cook's Illustrated Vodka Pie Crust

Leave it to Cook's Illustrated to come up with a pie crust recipe that uses vodka to get a flaky, tender crust
- 12 Tbsp. (1-1/2 sticks) cold unsalted butter
- 1/2 cup cold vegetable shortening, cut into 4 pieces
- 1/4 cup vodka , 80 proof
- 1/4 cup water
- 2-1/2 cups (12-1/2 oz.) unbleached all-purpose flour, divided use
- 1 teaspoon table salt (I used sea salt)
- 2 Tbsp. sugar

- 1 cup white sugar
- 4 medium eggs
- 2 teaspoons vanilla
- 3 cups flour (sifted or fluffed before measuring)

- 1 teaspoon salt
