- 1 1/2 lb boneless skinless chicken breasts (about 3)
- 1/3 cup flour
- 2 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 eggs
- 1 1/2 cups finely chopped pecans
- 1/2 cup panko

- CENTRE OF TRIFLE:
- APPLES
- 6 cups chopped baking apples (Golden Delicious, Northern Spy)
- 1/2 cup brown sugar
- 2 tsp corn starch
- 2 tsp lemon juice
- 1 tsp cinammon
- 1/2 cup apple juice or amber rum
- WHIPPED TOPPING
- 1 cup whipping cream
- 1 tbsp sugar
- 1/4 cup crystallized ginger (I did not use this)
- CUSTARD
- 8 egg yolks
- 4 cups milk
- 3/4 cup sugar
- 1/2 cup corn starch
- 2 tsp vanilla
- GINGERBREAD:
- 1 - half cup butter, softened
- 1 - half cup sugar
- 1 cup molasses
- 1 egg
- 1 tsp vanilla
- 2 and one half cups flour
- 1 tbsp ground ginger
- 2 tsp cinammon
