Sugar Free Muffins

1. Preheat the oven to 370 degrees and grease a muffin tray
- 2 ripe bananas
- 1 cup of grated apple
- 1/4 cup of apple juice {I used juice that I made}
- 1/2 cup of frozen wild blueberries
- 2 cups of flour {see below for substitutions}
- 1 egg
- 1/4 cup of melted butter
- 1 tbsp cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
Asian Vegetables with Tofu and Coconut Milk

Blanch broccoli and cauliflower in pot of boiling salted water 1 minute
- 8 small broccoli florets
- 8 small cauliflower florets
- 1 tablespoon oriental sesame oil
- 2 large garlic cloves, minced
- 12 pieces canned baby corn, drained
- 8 snow peas, strings removed
- 6 large shiitake mushrooms (about 4 ounces), stemmed, caps sliced
- 1 small Chinese or Japanese eggplant, quartered lengthwise, cut crosswise into 1-inch pieces
- 3/4 cup canned unsweetened coconut milk*
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce* or vegetarian oyster sauce*
- 1 2-inch square baked teriyaki-seasoned tofu, cut into 1x1/2x1/4-inch pieces
- 1 baby bok choy, quartered lengthwise
- 1 green onion, cut into 1-inch pieces
Vegan Mushroom Rosemary Gravy

Saute mushroom in 1 tbsp olive oil until browned and liquid is evaporated
- 6 tbsp flour
- 7 tbsp olive oil
- 1/4 cup onion, diced
- 1/4 cup carott, diced
- 1/4 cup celery, diced
- 2 tsp dried rosemary
- 1 tsp dried thyme
- 1 cup mushrooms, thinly sliced
- 3 cups vegetable broth
- 2 tbsp soy sauce
- 1/2 tsp honey
- salt and pepper to taste
Maple Fig Bars

Preheat the oven to 350F and lightly coat a 13x9 inch baking dish with canola oil spray
- ICING:
- canola oil spray
- 1 cup chopped dried figs
- 1/2 cup packed dark brown sugar
- 1/4 cup canola oil
- 1/2 cup maple syrup
- 1 large egg
- 2 large egg whites
- 1/2 cup unsweetened applesauce
- 1/2 cup wholewheat pastry flour or wholewheat flour
- 1 1/2 cups unbleached all-purpose flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup powdered sugar
- 1 tbsp maple syrup
- 1/2 tsp maple flavouring (optional)
- 1-2 tsp water

- 2 1/2 cups all-purpose flour (recommended: White Lily)
- 1 teaspoon baking soda
- 1 teaspoon cocoa
- 1 1/2 cups granulated sugar

- 1 1/2 cups canola oil

- 1 (1-ounce) bottle red food coloring
- 1 teaspoon vanilla
- 1 cup buttermilk

Vegetable Grain Soup

Bring the broth, water, onion, carrots, celery, tomatoes, garlic and thyme to a boil over high heat
- 2 quarts vegetable broth
- 1 quart water
- 1 small onion , coarsely chopped
- 2 medium carrots , cut into 1/2-inch-thick rounds
- 2 ribs celery , cut into 1/2-inch-thick slices
- 1 can (14.5 ounces) tomatoes with juice
- 2 cloves garlic , minced
- 2 sprigs fresh thyme or 1/2 teaspoon dried thyme
- 1/4 celery root , peeled and cut into 1-inch cubes (2 cups)
- 1/3 cup pearl barley
- 1/3 cup split peas
- 1/3 cup lentils , preferably tiny French lentilles de Puy
- 1/4 small head chopped green cabbage (about 2 cups)
- 1 large Yukon Gold potato , peeled and cut into 1/2-inch cubes
- 1 medium zucchini , scrubbed and cut into 1/2-inch cubes
- 1 yellow squash , scrubbed and cut into 1/2-inch cubes
- Salt and freshly ground pepper
- Chopped fresh herbs , such as basil, parsley or chives, for garnish
Super Yummy Low-Fat Whole Wheat Oatmeal Raisin Cookie

- 3/4 cup of dry oats
- 2 tablespoons olive oil or 1 tablespoon oil + 1 tablespoon of soy milk
- 1/3 - 1/2 cup of sugar or artificial sweetener
- 1/4 cup of unsweetened applesauce
- egg substitute equivalent of 1 egg
- 3/4 teaspoon of vanilla essence
- 1/4 cup raisins
- 1/4 cup of nuts or seeds (optional)
Slow Cooker Jambalaya

In a slow cooker, combine chicken, sausage, tomatoes, onion, green pepper, celery, and chicken broth
- 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
- 1/2 pound andouille sausage, diced
- 1 (28-ounce) can diced tomatoes
- 1 medium onion, chopped
- 1 green bell pepper, seeded and chopped
- 1 stalk celery, chopped
- 1 cup reduced-sodium chicken broth
- 2 teaspoons dried oregano
- 2 teaspoons Cajun or Creole seasoning
- 1 teaspoon hot sauce
- 2 bay leaves
- 1/2 teaspoon dried thyme
- 1 pound frozen peeled and cooked shrimp, thawed

- 1 T Nama Shoyu
- 1 T Agave (Optional)
