Electrolyte Drink

Mix all ingredients
- 1 liter filtered water
- 1/4 cup freshly-squeezed lemon juice
- 1 T sugar (unrefined, unbleached cane sugar)
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt (best to use French Sea Salt)
Soba with Green Soybeans

Bring 2 saucepans of water to a boil
- 9 oz (250 g) soba
- 1 pkg frozen green soybeans
- 4 tsp sesame seeds
- 1 tbsp toasted sesame oil
- 1 tbsp mirin, apple juice concentrate, or clear honey
- 1 tbsp rice vinegar
- 1 tbsp soy sauce
- 4 green onions, shredded
Mixed Berry Puddin'

In a food processor, blend fruit with "milk" and vanilla until smooth and set aside
- 1 cup mixed berries
- 1 cup "milk"
- 1 tbsp vanilla extract
- 1/3 cup sugar
- 3 tbsp cornstarch
- 1/8 tsp salt
Healthy Raw Onion Rings

Slice onions and place in zip lock bag with almond milk
- Almond Milk:
- 1 C soaked almonds
- 4 C water
- Combine soaked almonds and water in blender. Strain through nutmilk bag. Save the pulp and dehydrate it.
- Onion rings:
- 1 Large Onion
- 4 C Almond Milk
- 3/4 C Almond Milk Pulp
- 1 C Ground Flax (3/4 C before grinding)
- 1 T. Smoked Paprika
- 1/2 t Ground Chipotle
- 1/2 t Salt
Sour Cream-Chocolate Cake with Peanut Butter Frosting & Chocolate-Peanut Butter Glaze

- 2 1/2 cups sugar
- 3/4 cup unsweetened cocoa powder, preferably Dutch process
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup neutral vegetable oil, such as canola, soybean or vegetable blend
- 1 cup sour cream
- 1 1/2 cups water
- 2 tablespoons distilled white vinegar
- 1 teaspoon vanilla extract
- 2 eggs
- For the Peanut Butter Frosting
- 10 ounces cream cheese, at room temperature
- 1 stick (4 ounces) unsalted butter, at room temperature
- 5 cups confectioners’ sugar, sifted
- 2/3 cup smooth peanut butter, preferably a commercial brand (because oil doesn’t separate out)
- For the Chocolate-Peanut Butter Glaze
- 8 ounces bittersweet chocolate, coarsely chopped
- 3 tablespoons smooth peanut butter
- 2 tablespoons light corn syrup
- 1/2 cup half-and-half
