One-Pot Chipotle-Style Chicken Burrito Bowls

Dinner cannot be made easier than with this recipe for One-Pot Chipotle-Style Chicken Burrito Bowls
- 1 pound boneless, skinless chicken breasts, diced into bite sized pieces
- 3 tablespoon of olive oil
- 1/4 cup of diced yellow onion
- 1 cup of uncooked extra-long grain rice
- 1 14.5 oz can of diced tomatoes, drained
- 1 15oz can of black beans, drained and rinsed
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of chili powder
- 1 teaspoon of cumin
- 2 1/2 cups of low-sodium chicken broth
- 2 cups of colby jack, monterey jack or cheddar cheese
- kosher salt and pepper
- freshly diced tomatoes
- diced green onions
- sour cream
- guacamole
Hungarian Goulash

What To Do: In a 5-quart slow cooker, combine beef, onion, and garlic; mix well
- 2 pounds top round beef, cut into 1-inch pieces
- 1 cup chopped onion
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 tablespoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon dried thyme
- 1 (28-ounce) can whole tomatoes, undrained, coarsely chopped

- 1 cup sour cream

- 2 (16-ounce) cans pinto beans, rinsed and drained
- 1 green bell pepper, chopped

Broccoli Chicken Fettuccine Alfredo

Instructions Bring a large pot of water to a bowl
- 1 pound fettuccine pasta
- 2 heads of broccoli, chopped, about 3-4 cups
- (4) 6-oz boneless skinless chicken breasts, cut into 1″ cubes
- 4 tablespoons butter
- 3 cloves of garlic, grated or finely minced
- 2 cups heavy cream
- 1 cup grated parmesan cheese, plus more for garnish
- 2 tablespoons olive oil
- salt and pepper
King Ranch Casserole

What To Do: Preheat oven to 350 degrees F
- 1 tablespoon vegetable oil
- 1 large green bell pepper, diced
- 1 cup chopped onion
- 2 garlic cloves, minced
- 1 (10-3/4-ounce) can cream of chicken soup
- 1 (14.5-ounce) can diced tomatoes with green chilies
- 1 to 2 tablespoons chili powder
- 12 corn tortillas, cut into 1/2-inch strips
- 4 cups diced cooked chicken
- 2 cups shredded sharp Cheddar cheese

- 4 tablespoons butter
- 2 tablespoons olive oil
- 4 ounces cream cheese softened
- 2 cups heavy whipping cream
- 1 teaspoon Stone House Seasoning
- 1/2 cup grated Parmesan cheese
- 1/2 cup Mozzarella cheese, shredded
Bean Soup with Squash & Rice – Honduras | CRS Rice Bowl

Sauté onion, bell pepper and garlic in oil until translucent
- 1 onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 2 T fair trade olive oil
- 3 15-oz cans red beans, drained
- 2 c water
- 1 vegetable bouillon cube
- 1 yellow chili, seeded and minced
- 1 jalapeño, seeded and minced
- 1 15-oz can diced tomatoes with liquid
- Juice of 1 lime
- 2 chayote squash, peeled, seeded and cut into cubes (may substitute yellow squash or zucchini)
- Fresh cilantro
- 4 c cooked white rice
Stupid Chicken

- 4 skinless boneless chicken breasts
- 1 (28-ounce) can Italian-seasoned diced tomatoes
- 1 envelope Herb and Garlic Recipe soup mix (Lipton's or similar)
- hot cooked rice or pasta
- Parmesan cheese, grated
Mini Quiche Recipe

- 6 large eggs beaten
- 1 cup heavy cream
- 1 1/2 cups grated cheddar cheese
- Salt and pepper

- mushrooms cleaned and diced

- bacon cooked and crumbled
- ham cooked and diced

Imitation Crabmeat Salad

In a large bowl, combine onion, green pepper, celery and imitation crab meat
- 1/2 cup diced red onion
- 1/2 cup diced green bell pepper
- 1/2 cup diced celery
- 1 pound imitation crab meat, flaked
- 1/4 cup sour cream
- 1 1/2 cups mayonnaise
- 2/3 cup Italian-style salad dressing
- 2 tablespoons lemon juice
- 1/2 teaspoon dried oregano
- salt and pepper to taste
