Beat eggs until foamy. Add oil, sugar, and vanilla and mix lightly
- 2 cups grated zucchini with peel
- 3 eggs
- 1 cup oil
- 2 cups white sugar
- 2 tsp vanilla
- 3 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp nutmeg
- 3 tsp cinnamon
- 1 cup chopped walnuts
- OPTION: can substitute for the oil 1 cup applesauce
- OR
- 1/2 cup oil and 1/2 cup applesauce for the 1 cup of oil
Breakfast Egg Casserole

Preheat oven to 350° Chop and brown sausage until cooked; drain fat
- 1 lb pork sausage
- 4 1/2 cups bread, cubed
- 2 cups cheddar cheese, grated
- 3 scallions, chopped
- 10 eggs, slightly beaten
- 4 cups whole milk
- 1 tsp dry mustand or 1 squirt of yellow mustard
- 1/4 tsp onion powder
- Optional topping: sliced mushrooms
