Preheat oven to 350 degrees F
- 2 pounds ground beef
- 1 (1.25-ounce) packet taco seasoning
- 1 (1-pound) package refrigerated biscuits
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 2 tablespoons flour
- 1 (14-1/2-ounce) can petite diced tomatoes, drained of excess liquid
- 2 (4-ounce) cans diced green chiles
- 2 cups shredded sharp Cheddar cheese

1. Preheat oven to 375 F. Heat large nonstick skillet over medium-heat
- 1 teaspoon olive oil
- 1/2 small onion chopped
- 4 cloves garlic minced
- 8 to 10 ounces ripe tomatoes, cored and chopped or 2 cans ( 15 ounces each) no-salt added whole tomatoes, drained, chopped
- 1/2 green pepper, chopped
- 1/2 to 1 jalapeno pepper, seeded, minced ( optional)
- 1 teaspoon dried oregano leaves, crushed
- 1/2 teaspoon ground cumin
- 1/4 cup small pimiento-stuffed green olives
- 2 teaspoons drained capers ( optional)
- 1 pound sinkless fillets rockfish, snapper, halibut or cod

Preheat oven to 350F. Lightly grease small shallow baking dish
- 1 whole chicken breast halved skinned boned and pounded slightly
- 1 garlic cloved halved
- 1 ounce proscirtto
- 1 ounce mozzarela cheese thinly sliced
- 2 tablespoons seasoned bread crumbs
- 2 tablespoons meduim dry sherry
- 2 tablespoons butter
- salt
- freshly ground pepper
- 1 tablespoon parsley

- 3 ounces chocolate
- 2 cups sugar
- 2 teaspoons baking powder
- 2 eggs
- 1 1/2 cups nuts

- 1 1/2 cups milk

7 Layer Mexican Dip

Mix beans and taco seasoning and spread onto bottom of 9" pie plate
- 1 can (16oz) refrained beans
- 1 T taco seasoning mix
- 1 c sour cream
- 1 c salsa
- 1 c shredded lettuce
- 1 c Mexican style shredded cheese
- 1/2 c chopped green onion
- 2 T sliced pitted black olives

- 1 cup raw long-grain white rice (not converted)
- 1/4 cuo finely chopped white onion
- 2 fresh poblano or Anaheim chilis, roasted, peeled, seeded, deveined, chopped
- 6 thin green onions, thinly sliced
- 1 cloved garlic, minced
- 1/4 salt
- 1/4 teaspoon ground cumin
- 1 3/4 cups chicken broth
- 1 1/2 cups shedded queso Chihualua or Monterey Jack cheese
- 1/3 cup coarsely chopped cilantro
- Clantro sprig for garnish
