- Carcass from one 12-14 lb roasted turkey, picked clean
- 2 large onions, one quartered and one chopped
- 4 peeled carrots, 2 coarsely and 2 sliced
- 4 stalks celery, 2 coarsely chopped and 2 sliced
- 6 garlic cloves, 4 smashed and 2 chopped
- 1 bay leaf
- 10 whole black peppercorns
- 1 tbsp extra virgin olive oil
- 2 large eggs
- 6 tbsp all-purpose flour, plus more as needed
- 1/2 tsp salt, plus more as needed
- freshly ground black pepper, to taste
- 2 cups leftover stuffing
- 2 sprigs fresh thyme
- 2 cups shredded leftover turkey meat
- 1 cup leftover corn kernels
Gooey Brownies

Cream sugar, cocoa, and butter together
- 2 cups sugar
- 1/2 cup cocoa
- 1 cup butter
- 4 eggs
- 1/2 cup milnot
- 1/2 teaspoon vanilla extract
- 1 cup flour
Dried Beef Dip

Mix all ingredients and form into a ball
- 8 oz cream cheese; softened
- 1 jar dried beef; chopped
- 3 green onions; chopped
- 4 tbsp butter
- 1 tsp Worcestershire
- 1/2 tsp season salt
Broccoli & Cauliflower Salad

Make the dressing as indicated on the directions, and chill
- 1 head cauliflower; broke into pieces
- 1 bunch broccoli (fresh); broke into pieces
- 1 bunch green onion; chopped
- 1 cucumber; sliced
- 1 package radishes; sliced
- 1 bell pepper; thinly sliced
- 1 avocado; sliced
- 1 can black olives; sliced
- 1 package, lg hidden valley ranch dressing mix
Green Tea Truffles

Place chocolate in medium bowl
- 1/2 lb bittersweet chocolate; finely chopped
- 3/4 cup half and half, fat-free
- 4 green tea bags; decaf
- 1/4 cup cocoa powder; unsweetened
Christmas Salad

Bring water, and sugar to a boil
- 3/4 cup water
- 3/4 cup sugar
- 1 can cherry pie filling
- 1 large cherry jello
- 1 can pineapple; crushed, with juice
- 1 tablespoon lemon juice
- 1 cup coca cola, cold
- 1/2 cup nuts (optional)
Hot Fruit Bake

Drain fruit and layer in 2 quart casserole dish
- 20 oz pineapple; sliced
- 17 oz peach halves
- 16 oz apricot halves
- 16 oz pear halves
- 15 oz spiced apple rings
- 1/2 cup butter
- 1/2 cup sugar
- 2 tablespoon cornstarch
- 1 cup dry sherry
Frozen Salad

Combine all ingredients. Put in muffin tins lined with papers, or in a Pyrex oblong dish
- 2 cups sour cream
- 1 cup pineapple; crushed
- 3/4 cup sugar
- 2 tablespoon lemon juice
- 1/4 cup cherries
- 1/4 cup nuts (optional)
- 3 bananas (medium); diced
- 1/8 teaspoon salt
Fruit Dip

- 8 oz cream cheese; softened
- 1/2 cup brown sugar
- 1 tsp vanilla extract
- chopped pecans; to taste
- juice of an orange
Juicy Cobbler

- 1 stick butter
- 1 cup sugar
- 1 cup flour
- 3/4 cup condensed milk (sweetened)
- 1/2 teaspoon baking powder
- pinch salt
