Family Style Vegetable Soup

Can be made with ground beef or chicken
- 1 tablespoon olive oil
- 1 pound ground round (or 2 chopped boneless chicken)
- 1/2 teaspoon salt
- 1/4 tsp. pepper
- 1 can (14.5 oz) diced tomatoes with basil, garlic and oregano
- 1 can (14.5 oz) diced tomatoes
- 1 can beef (or chicken) broth
- 1 pkg. (16 oz) frozen mixed vegetables
- 1 bay leaf
- 1 cup uncooked macaroni, or spaghetti broken into 1 inch pieces
Baked Ziti

Place pasta in oiled casserole dish
- 1 Lb. ziti pasta, cooked, drained
- 1 Lb. ground beef or sausage
- 1 Lb. shredded mozzarella cheese
- 1 jar pasta sauce
Pina Colada Cake

Preheat oven to 350 degrees
- 1 white cake mix (without pudding added)
- 1 1/3 cup water
- 2 egg whites
- 1 3 1/2 oz. can coconut, divided
- 1 can (9 oz)cream of coconut
- small can crushed pineapple
King Ranch Chicken

Combine 1st 4 ingredients
- 1 10 oz. can cream of chicken soup
- 1 10 oz. can cream of mushroom soup
- 2 cups chicken broth
- 1 10 oz. can Rotel tomatoes & chilis
- 12 tortillas, cut in pieces
- 1 (3-4 lb.) chicken, cooked and cut into bite sized pieces
- 1 lg. onion, chopped
- 2 cups grated cheese
Sour Cream Enchiladas

Mix together soup, sour cream, chilis, and salt
- 2 cans cream of chicken soup
- 1/2 cup sour cream
- 1 4 oz. can green chilis
- 1 tsp salt
- 2 doz. corn (or flour) tortillas
- green onions (to top casserole)
- 2 cups grated cheese
Quick Red Velvet Cake

Pour cake mix, water, oil, food color and vanilla in large bowl
- Butter Roux Frosting:
- 1 pkg. German Chocolate cake mix
- 1 cup sour cream
- 1/2 cup water
- 1/4 cup oil
- 1 oz. red food color
- 3 large eggs
- 1 teaspoon pure vanilla
- 1 cup milk
- 3 tablespoons flour
- 1 cup sugar
- 1 cup butter, softened

Mix by hand: cake mix, 1 egg, and melted butter Press into 9x13" pan
- 1 Devil's food cake mix
- 3 eggs
- 1 stick butter (melted)
- (1) 6 oz. pkg. chocolate chips
- 1 cup chopped nuts (optional)
- (1) 16 oz. box powdered sugar
- (1) 8oz. pkg soft cream cheese
Amaretto Mousse

- 4 tablespoon butter
- 1 cups sugar
- 1 1/2 teaspoons unflavored gelatin
- 5 eggs
- 1 1/2 tablespoon Amaretto liqueur
- 3/4 cup ground almonds
- 1 1/2 cup heavy cream, chilled
