Amaretto Cake

Tastes and smells wonderful!
- Creamy Amaretto Filling:
- 1 white cake mix
- 3/4 cup Amaretto
- 3 eggs
- 1/2 cup water
- 1/3 cup oil
- 1/4 teaspoon almond extract
- 3/4 cup butter, at room temperature
- 3 tablespoons amaretto liqueur
- 1 1/2 cups confectioners sugar
- Amaretto Buttercream Icing:
- 1 cup butter, at room temperature
- 2 pounds confectioners sugar
- 1 cup Crisco
- 6 tablespoons amaretto
Bessie's Potato Salad

I got this recipe from Bessie Martin (who had 10 kids!)
- 10 pounds potatoes, peeled, sliced and cooked
- hamburger dill pickles
- sweet pickles (I like to use bread and butter or cajun)
- stuffed olives
- 1 dozen boiled eggs
- small jar pimentos
- green onions
- onions
- mayonnaise
- salt and pepper
Easy Butter Cake

Grease and flour two 8 or 9" round cake pans
- 1 package plain white cake mix
- 1 stick butter, melted
- 2 teaspoons pure vanilla extract
- 1 cup whole milk
- 3 large eggs
Carrot Cake

Mix first 8 ingredients together and beat for 3 minutes
- 3 eggs
- 3 cups sugar
- 3 1/2 teaspoon baking powder
- 3/4 teaspoon cinnamon
- 1 cup + 6 tablespoons oil
- 2 1/2 teaspoon baking soda
- 1 1/4 teaspoon salt
- 1 1/2 teaspoon vanilla
- 3 1/2 cups grated carrots (about 1 lb)
- 1 can (20 oz) crushed pineapple, including juice (opt.)
- 3 cups flour
- 1 cup chopped nuts
German Chocolate Cake

Heat oven to 350 degrees. Line bottoms of 3 (9") round cake pans with parchment paper
- Coconut-Pecan Filling:
- 1 pkg. (4 oz) Sweet Baking Chocolate
- 1/2 cup water
- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butter, softened
- 2 cups sugar
- 4 egg yolks
- 1 teaspoon vanilla
- 1 cup buttermilk
- 4 egg whites
- 1 can (12 oz) evaporated milk
- 1 1/2 cups sugar
- 3/4 cup butter
- 4 egg yolks, slightly beaten
- 1 1/2 teaspoon vanilla
- 1 pkg. (7 oz) shredded coconut (about 2 1/3 cups)
- 2 cups chopped pecans
Perfectly Easy Chocolate Cake

Mix according to cake mix directions, adding sour cream and vanilla
- 1 pkg. chocolate fudge cake mix
- 1 cup sour cream
- 1/2 cup oil
- 3/4 cup water
- 1 teaspoon pure vanilla
- 4 large eggs
Italian Cream Cake

Our family's all-time favorite! This was my most popular specialty cake among my cake customers
- 5 large eggs, separated at room temperature
- 2 cups sugar
- 1 stick (1/2 cup) unsalted butter, at room temperature
- 1/2 cup Crisco
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 cup buttermilk, at room temp.
- 1 teaspoon salt
- 2 cups sifted cake flour
- 1 cup coconut
- 1 cup chopped pecans
White Fruit Salad

Mix everything together and top with a few 1/2 cherries
- Optional:
- 1 lg. tub of whipped topping
- 1 container of sour cream
- 1 can mixed fruit
- 1 jar of cherries
- 1 sm. box instant pudding (vanilla or your favorite flavor)

Santa Fe Soup

- 1 lb. ground beef
- 1 medium onion
- 1 can whole corn, drained
- 1 can ranch style beans
- 1 can stewed chopped tomatoes
- 1 can rotel
- 1 lb. velveta, cubed

- 16 oz. cheese
