Texas Panhandle Coleslaw

Crush noodles. Brown noodles, sunflower seeds and slmonds till lightly browned, let cool
- Dressing:
- Large bag coleslaw mix
- 1 bunch green onions, chopped
- 2 pkg. chicken ramen noodles
- 1/2 cup sunflower seeds
- 1/2 cup sliced almonds
- 1 cup oil
- 1/2 cup sugar
- 1/3 cup rice or wine vinegar
- 1 teaspoon salt
- 1 teaspoon pepper
Happy Day Cake

This was the cake my mom always made
- 2 eggs
- 1/2 cup shortening
- 1 1/2 cups sugar
- 1 cup milk
- 1 teaspoon vanilla
- 2 1/4 cup flour
- 3 teaspoon baking powder
- 1 teaspoon salt
Double Fudge Brownies

In small saucepan, combine sugar, butter and water; bring just to boil
- 1 1/2 cup sugar
- 2/3 cup butter
- 1/4 cup water
- 1 - 12 oz. pkg chocolate chips
- 2 teaspoons vanilla
- 4 eggs
- 1 1/2 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chopped nuts
Cheese Stuffed Pasta Shells

Mix together cheeses (except parmesan)
- 8 oz. cream cheese
- 15 oz. ricotta cheese (not light)
- 6 oz. Swiss cheese, shredded
- 1 lb. mozzarella cheese, shredded
- 1/2 cup sour cream
- 1 cup small curd cottage cheese
- 1 egg, beaten
- 1/2 teaspoon grated onion
- 1 tablespoon dried parsley flakes
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 12 oz. box jumbo pasta shells
- 1 jar (30-32 oz) favorite spaghetti sauce
- 1/4 cup Parmesan cheese
Mom's Good Icing

Mix all ingredients and cook for 2 minutes
- 2 cups sugar
- 1/4 cup Karo
- 1/2 cup milk
- 1 stick oleo

Oooey-Gooey Butter Cake

Mix first three ingredients
- 1 pkg yellow butter cake mix
- 2 eggs
- 1 stick butter or oleo, melted
- 1 pkg cream
- 2 eggs
- 1 box powdered sugar (less 1/4 cup for top)
- 1 teaspoon vanilla
- 1/4 cup chopped pecans
Double Chocolate Treasures

Heat oven to 350 degrees. Melt 1 cup chocolate chips on high in microwave for 1-1 1/2 minutes; stir after 1 minute
- 12 oz. pkg. mini chocolate chips
- 1/2 cup butter
- 3/4 cup sugar

- 1 teaspoon vanilla
- 2 cups oats
- 2 teaspoon baking powder
- 1 1/2 cup flour
- 1/4 teaspoon salt
- 1/2 cup powdered sugar
Chile Relleno Bake

- 1 1/2 cup monterrey jack cheese, shredded
- 1 1/2 cup cheddar cheese, shredded
- 1 7 oz. can chopped green chilies
- 3 eggs
- 2 tablespoons flour
- 1 large can evaporated milk
Marinated Vegetable Salad

Bring dressing ingredients to boil
- Dressing:
- 1 cup chopped green pepper (1 small)
- 1 cup chopped celery (4 stalks) chopped small
- 1 can Shoe Peg corn, drained
- 1 large purple onion, chopped small
- 1 can French green beans, drained
- 2 small cans tiny English peas, drained
- 1 cup sugar
- 1/2 cup oil
- 3/4 cup vinegar
- dash of garlic salt
