Mix cream cheese and dressing mix until well blended
- 2 package (8 oz. each) reduced-fat cream cheese, softened
- 1 packet (1 oz) ranch dressing mix
- 2 green onions, minced
- 2/3 cup finely chopped sweet red or yellow peppers (or combo)
- 1 can (2-1/4 oz) chopped ripe olives, drained
- 4 (12-inch) flour tortillas
Pizza

Dissolve yeast in warm water with sugar in large mixing bowl
- sauce:
- 2 pkgs. dry yeast
- 1 1/3 cup warm water (120 degrees)
- pinch sugar
- 1 teaspoon salt
- 1/4 cup olive oil
- 3 1/2 to 4 cups flour
- 1 can tomato sauce (I like to use garlic flavored)
- 2 cloves garlic, minced
- 1/8 cup onion, minced
- 1 teaspoon basil
- 1 pound mozzarella cheese, grated
- toppings of your choice
Easy Enchilada Casserole

Brown beef, peppers and onion
- 1 lb. ground beef
- 1 large green pepper, chopped
- 1 large onion, chopped
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 3 1/2 oz. can mild chili peppers
- 1 can rotel
- 1 5-6 oz. pkg. tortilla chips
- 8 oz. (or more) grated Mexican cheese
- 1 can chicken broth
Banana Punch

This is made ahead of time and frozen
- 3 cups sugar
- 3 quarts boiling water
- 6 bananas, mashed
- 3 small cans frozen orange juice
- 3 small cans frozen lemonade
- 1 large can pineapple juice
- 3 large bottles ginger ale
Glazed Fruit Bowl

You can substitute other fruits of your choice
- 1 can (20 oz) unsweetened pineapple tidbits
- 1 pkg. (3 oz) cook-and-serve vanilla pudding mix
- 1 1/4 cups orange pineapple juice
- 1 pint fresh strawberries, halved
- 2 cups seedless grapes
- 6 kiwi, peeled and sliced
- 2 mangoes, peeled and cubed
- 1 can mandarin orange slices, drained
Easy Slow Cooker Chicken

Put chicken in crock pot and cover with sauce
- 1 chicken, cut up (or just use favorite pieces)
- 1 bottle Kraft Honey-Dijon Barbeque sauce
Cream Cheese Banana Nut Bread

Beat butter and cream cheese till creamy
- 3/4 cup butter, softened
- 8 oz. cream cheese
- 2 cups sugar
- 2 eggs
- 3 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cup mashed bananas (about 4 med)
- 1 cup chopped pecans
- 1/2 teaspoon vanilla
- topping: 1/2 cup coarse chopped pecans, 1/2 cup brown sugar, 1 tablespoon flour, 1 tablespoon melted butter, 1/8 teaspoon cinnamon
Hot Chicken Salad

Mix all ingredients (except chips) and pour into 9x13" pan
- 2 cups chicken, cooked and chopped
- 2 cups celery, chopped
- 1 cup toasted almonds
- 2 cans cream of chicken soup
- 1 can sliced mushrooms
- 1 pkg. potato chips, crushed
- 1 1/2 tablespoons lemon juice
- 3/4 cup mayonnaise
- 4 tablespoons onion, minced
- salt and pepper to taste
- 3 boiled eggs, chopped
Pollo Relleno

Place each chicken piece between two pices of plastic wrap and pound until about 1/2 inch thick
- 6 medium skinless, boneless chicken breast halves (about 1 1/2 pounds total)
- 1/3 cup yellow cornmeal
- 1/2 of a 1 1/4 oz. package (2 Tbsp) taco seasoning mix
- 1 egg
- 1 4-oz can whole green chile peppers, rinsed, seeded, and cut in half lengthwise (6 pieces total)
- 2 oz. Monterey Jack cheese, cut into six 2x1/2-inch sticks
- 2 tablespoons snipped fresh cilantro
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper
- 1 8-oz jar taco sauce or salsa
- 1/2 cup shredded monterey Jack or cheddar cheese
Potato Casserole

- 3 medium potatoes
- 6 slices bacon or ham
- 1/4 cup finely chopped onion
- 1 cup shredded cheese
- 1/2 cup cottage cheese
- 5 eggs, beaten
- salt and pepper to taste
