Personal Peanut Butter-Pie "Cheesecakes"

Whisk together whipped topping, cream cheese and peanut butter; spread or pipe on wafers
- 3 tbsp light whipped topping
- 2 tsp light whipped cream cheese
- 1 tsp creamy peanut butter
- 2 chocolate wafer cookies
Shortcut Ice Cream

1. Beat whipping cream with an electric mixer at high speed until stiff peaks form
- 2 c whipping cream
- 1 (14-oz) can sweetened condensed milk
- 2 tsp vanilla extract
- 1/4 tsp salt
Western Frittata

1. Preheat broiler and set rack about 6 inches from heat source
- 2 Tablespoons vegetable oil
- 1 small onion, chopped
- 1/2 green bell pepper, seeded and diced
- 6 ounces boiled ham, diced
- 8 large eggs
- salt and pepper
- 1/2 cup shredded cheddar
Cheesy Spinach and Bacon Dip

Combine ingredients in microwave bowl
- 1 package (10 oz.) frozen chopped spinach, thawed, drained
- 1 pound Velveeta cheese product, cut into 1/2 inch cubes
- 4 ounces cream cheese cubed
- 1 can (10 oz.) diced tomatoes and green chilies, undrained
- 8 slices bacon, crisply cooked, crumbled
Pumpkin Mousse

1. In a small saucepan, sprinkle gelatin over the cold water, and let soften 5 minutes
- 1 envelope unflavored powdered gelatin (1 scant Tablespoon)
- 1/4 cup cold water
- 1/2 cup pus 2 Tablespoons canned unsweetened pumpkin puree
- 4 large eggs, separated
- 1/4 cup plus 2 Tablespoons pure maple syrup
- pinch of freshly grated nutmeg
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground allspice
- 1/4 teaspoon salt
- pinch of freshly ground white pepper
- 2 Tablespoons dark rum
- 1/4 cup sugar
- 1 cup heavy cream
- sweetened whipped cream, for serving (optional)
Shrimp Remoulade

*Prepare an ice-water bath
- 1 1/4 pounds medium shrimp (about 40), shells on
- 1 1/2 cups reduced-fat (2 percent) plain Greek, yogurt
- 3 scallions, chopped
- 2 Tablespoons stone-ground mustard
- 2 Tablespoons ketchup
- 2 Tablespoons brine-packed capers, drained, rinsed, and chopped
- 1 Tablespoon fresh lemon juice
- 3/4 teaspoons minced garlic cloves
- Cayenne pepper, to taste
- 1 small head Bibb lettuce, torn
- Garnish: lemon wedges
Blue Cheese Dip

Sprinkle salt over garlic and chop, occasionally smearing mixture with blade of knife, until paste forms

- 1 garlic clove, coarsely chopped
- 2 1/2 tsp. red wine vinegar
- 1 tsp. finely chopped fresh thyme
- 1/2 lb. smoked (or regular) blue cheese, crumbled
- 1 cup sour cream
- 2/3 cup mayonnaise
- freshly ground black pepper
- assorted fresh vegetables for dipping
Spicy Turkey Thighs

1. Preheat the oven to 450F
- 3 Tablespoons unsalted butter, room temperature
- 5 teaspoons Old Bay Seasoning
- 1 Tablespoon fresh lemon juice
- 2 Bone-in, skin-on turkey thighs (about 2 pounds total)
Chocolate Chip Crunch Cookies

Preheat oven to 375F. Melt butter, add the sugars and stir
- 1 cup butter (2 sticks), melted
- 1 cup white sugar
- 1 cup brown sugar
- 2 teaspoons baking soda
- 2 teaspoons vanilla
- 2 beaten eggs
- 2 1/2 cups flour
- 2 cups crushed corn flakes
- 1-2 cups chocolate chips

- 1 cup confectioners' sugar
- 2 1/2 cups vegetable oil
- 24 wonton wrappers
- 1 large egg, lightly beaten
- 1/2 cup finely chopped milk chocolate (3 ounces)
