Red Velvet Cheesecake

1. Make the crust: Preheat the oven to 350F
- For the Crust:
- 1 1/2 cups finely crushed chocolate wafer cookies (about 28 cookies)
- 5 Tablespoons unsalted butter, melted
- 1/3 cup sugar
- pinch salt
- For the Filling:
- 4 8-ounce packages cream cheese, softened
- 1 1/4 cups sugar
- 1 Tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 2 Tablespoons all purpose flour
- 4 large eggs
- 1 Tablespoon unsweetened cocoa powder
- 1 teaspoon red food coloring
Beef Pita Pizzas

1. Position a rack in the upper third of the oven and preheat to 400F
- 3 Tbls. extra-virgin olive oil
- 1 medium onion, finely chopped
- 1 medium red bell pepper, finely chopped
- 2 Tbls. tomato paste
- 8 oz. 90% lean ground beef
- kosher salt and freshly ground pepper
- 1/2 c. plain 2% Greek yogurt
- 1 Tbl. plus 2 tsp. red wine vinegar
- 4 whole-wheat pocketless pitas
- 1 head green-leaf lettuce, torn into pieces
- 1/2 cup pickled beets, cut into bite-size pieces

Pork Chops with Pineapple and Rice

1. Cook rice according to package instructions
- 2 cups long-grain white rice
- 2 teaspoons vegetable oil
- 4 bone-in pork chops (2-1/2 pounds total, 1 inch thick)
- 1 pineapple, peeled, cored, and cut into 1/2-inch pieces
- 1 jalapeno, diced small
- 1 Tablespoon soy sauce
- 1/4 cup packed fresh cilantro leaves, for serving

- 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
- 1 2/3 cups all-purpose flour (spooned and leveled), plus more for pan
- 1 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 1/4 cups sugar
- 2 large eggs room temperature
- 1 1/3 cups mashed overripe bananas (3 to 4)
- 2 Tablespoons sour cream
- 1 teaspoon pure vanilla extract
- 6 ounces bittersweet chocolate, chopped
No-Churn-Mint-Chip Ice Cream

- 14 oz can sweetened condensed milk
- 2 tsp peppermint extract
- 1 Tbsp creme de menthe

Four Cheese Macaroni with Bacon

- 1/4 cup unsalted butter, plus 3 Tbsp.

- 1/2 tsp red pepper flakes
- 1 1/2 cups Panko-style bread crumbs
- 6 cups whole milk
- 1 small onion, halved
- 4 oz. bacon (3-4 slices), cut into 1/2-inch pieces
- 3 Fuji apples, peeled and diced
- 2 Tbsp. apple cider vinegar
- 3/4 cup diced sopressata or other similarly spiced cured meat
- 3/4 cup chopped deli-style cooked ham
- salt
- 1 lb. dried shell pasta
- 1/3 cup all-purpose flour
- 1 1/2 cups grated whole-milk mozzarella cheese (reserve 1/2 cup for topping)
- 1 cup grated aged cheddar cheese
- 1 cup grated smoked Gouda cheese
- 1 cup grated Harvati cheese
Marshmallow Cookie Sandwiches

- 2 envelopes unflavored gelatin (about 2 Tablespoons)
- 2/3 cup cold water

- 1/3 c Miracle Whip dressing
- 1 1/2 tsp. Dijon mustard
- 1 hard-cooked egg, chopped
- 4 green onions, sliced

- 3 tablespoons apple jelly
- 1 teaspoon chopped fresh thyme
- 3 boneless center-cut pork chops (about 1 1/4 pounds)
- Kosher salt and freshly ground pepper
- 1/2 cup extra-virgin olive oil, plus more for brushing
- 1/2 small red onion, finely diced
- 3 Tablespoons whole-grain mustard
- 1/4 cup apple cider vinegar
- 2 heads Boston or Bibb lettuce, torn
- 1 Fuji or Gala apple, diced
- 1 small turnip, peeled and diced
- 1/4 cup crumbled blue cheese
- chopped fresh parsley, for topping (optional)
Garlic Cheese-Stuffed Burgers
