- 2 tsp baking powder
- 1/2 tsp baking soda

- 1/2 cup + 2 tbsp vegan butter, cold
- 3/4 cup dates, chopped
- 1 flax egg*
- 1/2 cup soy milk
- 1/2 tsp apple cider vinegar
- Topping
- 2 tbsp soy creamer
- 1/4 cup oats
Pasta Primavera Salad With Creamy Dill Dressing

This is one of my absolute favorite pasta dishes
- 2 cups 100% whole-wheat (or whole-grain) penne pasta, uncooked
- 2 cups asparagus, cut into pieces
- 1/4 cup organic fat-free plain Greek yogurt
- 1 tablespoon lemon juice
- 2 teaspoons extra virgin olive oil
- 2 teaspoons Dijon mustard
- 1/4 teaspoon sea salt
- 8 hard-boiled eggs, whites only, chopped
- 2 cups cherry tomatoes, halved
- 1/4 cup green onions, finely chopped
- 1/4 cups fresh dill weed, finely chopped (or 2 tbsp dried)

- 2 1/2 cups blanched almonds (dry), ground

- 2/3 cup corn flour or cornmeal

- 2 tbsp lite soy sauce
- 2 tbsp seasoned rice vinegar
- 1/2 cup water
- 2 tsp ginger, ground
- 1 tsp garlic powder
- 10 slices (1" dia) fresh ginger root
- 8 large sized scallions
- 2 tsp corn starch

- 8 slices rye bread
- 4 tablespoons Tofu Mayo or other dairy- and egg-free mayonnaise substitute

Butternut Squash Tian with Herbed Bread Crumbs

Heat the oven to 375°F and lightly grease a 1 1/2 to 2-quart baking dish (such as a deep pie dish) with olive oil

- 5 cortland or other sweet tart cooking apples, peeled,
- cored, and coarsely chopped
- Juice from 1⁄2 lemon
- 1 ⁄2 cup fresh or thawed frozen cranberries
- 3 –4 tbsp. sugar
- 3 pinches ground cinnamon
