- 2 tablespoons sherry vinegar, or red-wine vinegar

- 20 mint leaves
- 4 teaspoons agave nectar
- juice of 1 lime
- 1/4 cup + 2 Tablespoons reserved grapefruit juice
- 3 oz rum (2 shots)

Method - Wash ‘n’ chop the spinach then in a large bowl mix the spinach, lemon juice, salt and oil

- 1 teaspoon Himalayan salt
- 1/8 cup onion, diced
- 2 garlic cloves, crushed
- 2 teaspoons minced fresh ginger
- 2 teaspoons mustard seeds
- 2 teaspoons ground cumin
- 1 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 tablespoon garam masala
- 1 cup fresh corriander, roughly chopped
- 1 cup diced mango
- 1/2 cup raisins
- 1 teaspoon lemon juice
- 2 teaspoons macadamia oil (or substitute with olive oil)
- 2 cups cashew or macadamia nuts
- 1 cup water
- 2 teaspoons agave
- 2 teaspoons tamari

For non-sweet applications, omit vanilla and sugar
- Whipped Ener-G can be used as egg whites,
- but they won't be as thick and fluffy.
- Vegan "Whipped Eggwhite"
- 2 Tbs Ener-G Egg Replacer
- 4 Tbs water
- 2 Tbs sugar
- 1 tsp vegan gelatin (softened)
- 1 tsp vanilla
- Mix Egg Replacer and water together.
- Stir in sugar, gelatin and vanilla.
- Beat until stiff.
- For non-sweet applications, omit vanilla and sugar.
- For stiffer meringue, use more gelatin.

- 2/3 cup canned diced or crushed tomatoes in their juice
- 1 Tbsp lemon juice
- 1 Tbsp low-sodium soy sauce
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 Tbsp molasses
- 1 tsp mustard
- 1/2 tsp ground ginger
- 1/4 tsp ground black pepper
- 1/4 tsp onion powder
- 1/8 tsp allspice
- kosher salt to taste
