* Cook pasta according to package directions; drain
- 1 * 1 package (13-1/4 ounces) whole wheat penne pasta
- 4 * 4 cups cubed cooked chicken breast
- 1 * 1 can (29 ounces) tomato sauce
- 1 * 1 can (14-1/2 ounces) diced tomatoes, drained
- 1 * 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 2 * 2 cans (2-1/4 ounces each) sliced ripe olives, drained
- 1/4 * 1/4 cup chopped red onion
- 2 * 2 tablespoons chopped green pepper
- 1 * 1 teaspoon dried basil
- 1 * 1 teaspoon dried oregano
- 1/2 * 1/2 cup shredded part-skim mozzarella cheese
- 1/2 * 1/2 cup crumbled feta cheese

- 1 cup pecans, chopped
- 1 cup gluten-free oats
- 1/3 cup pine nuts
- 1/4 cup flax seeds
- 2/3 cup light brown sugar
- 1/2 cup honey
- 4 Tbsp. unsalted earth balance or butter
- 1/2 tsp. salt
- 2 tsp. g-free vanilla extract
- 2 cups g-free puffed brown rice cereal

New York Strip Steak Lavished with Tomatoes and Olives

Preheat the broiler. Combine the tomatoes and olives in a small bowl and season with pepper
- 8 ripe plum tomatoes, seeded and cut into 1/4-inch dice
- 1 1/4 cups coarsely chopped pitted Nicoise or Gaeta olives
- Freshly ground black pepper to taste
- 3 Tbsp. balsamic vinegar
- 1/4 cup extra-virgin olive oil
- 1/2 cup coarsely chopped fresh flat-leaf parsley
- 4 prime aged New York strip steaks, cut 1 1/2 inches thick (about 1 pound each)
Carmelized Onion and Portobella Quinoa

- 1 * 1 cup Quinoa
- 1 * 1 Tablespoon Olive Oil
- 1 * 1 whole Small, Sweet Onion, Chopped
- 1 * 1 cup Chopped Baby Portobella Mushrooms
Chicken Noodle Soup with Dill

Bring broth to a boil in a Dutch oven
- 10 cups chicken broth, homemade or reduced-sodium canned
- 3 medium carrots, peeled and diced
- 1 large stalk celery, diced
- 3 Tbsp. minced fresh ginger
- 6 cloves garlic, minced
- 4 ounces dried egg noodles (3 cups)
- 4 cups shredded cooked skinless chicken (about 1 pound)
- 3 Tbsp. chopped fresh dill
- 1 Tbsp. lemon juice or to taste
Mashed Cannellini Beans

Heat a skillet over medium heat and then add the oil until shimmering
- 2 tsp. olive oil
- 3 cloves garlic
- 1 can cannellini beans, drained and rinsed
- 2 tsp. fresh chopped rosemary or 1/2 tsp. dried
- 3/4 cup chicken or vegetable broth
- 2 tsp. lemon juice

- 1-1/2 cups Magners Irish cider or similar fermented cider
- 2 tsp. Dijon mustard
- 1/3 cup sunflower oil
- 2 Tbsp. hazelnut oil
- Salt and freshly ground pepper to taste
- Salad:
- 2 Tbsp. extra virgin olive oil
- 2 pounds sea scallops
- Salt and freshly ground pepper to taste
- 1 head Bibb or Boston lettuce, shredded
- 1 avocado, peeled and diced
- 2 Granny Smith apples, peeled, cored, and diced
- 1 Tbsp. minced fresh flat-leaf parsley
- 1 Tbsp. minced fresh dill
- 1 Tbsp. minced fresh chives
- Freshly ground pepper
Strip Steak with Chimichurri

- 1/3 cup extra virgin olive oil
- 3 Tbsp. red wine vinegar
- 1/2 tsp. crushed red pepper flakes
- 1 Tbsp. finely grated lemon zest
- Coarse salt and freshly ground black pepper
- 2 New York strip steaks (each about 1 pound and 1 inch thick)
