Chocolate Coconut or Cinnamon-Glazed Vanilla Mini Cake Donuts

Preheat the oven to 325 F
- For the chocolate coconut glaze:
- 5 oz. / 1 cup gluten-free flour blend (I used 1/2 cup potato starch, 1/4 cup sorghum, and 1/4 cup brown rice flour)
- 2.5 oz. white sugar (~1/4 cup + 2 tbsp.)
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. Earth Balance Buttery Spread, melted
- 1 egg
- 2.5 oz. cranberry juice (~1/4 cup + 2 tbsp.)
- 1 tsp. vanilla
- 1/4 tsp. cinnamon
- 1/8 tsp. nutmeg
- 1 cup powdered sugar
- 3 - 4 tbsp. cocoa powder
- 1 tsp. vanilla
- 1/2 - 1 tsp. coconut extract (to your own taste)
- 1 - 3 tbsp. hot water
- For cinnamon glaze:
- 1 cup powdered sugar
- 1 1/2 tsp. vanilla
- 2 - 4 tbsp. hot water
- 1/4 - 1/2 tsp. ground cinnamon

Make it merrier with extra flavor-try drizzling the fruit with strawberry flavored pancake syrup or caramel topping...
- 1 package (10.75 oz.) frozen pound cake loaf, cut into fourteen 1/2-inch slices
- 2/3 cup soft cream cheese with strawberries, raspberries or pineapple
- 1 can (11 oz.) mandarin orange segments, well drained
- 56 bite size pieces assorted fresh fruit (kiwifruit, strawberry, raspberry, pear, apple)
- Chocolate-flavor syrup, if desired
- Toasted coconut or sliced almonds, if desired
Turkey and Pancetta Meatballs

Gently mix turkey, pancetta, onion, garlic and bread crumbs
- 1 pound ground turkey, preferably 7% fat
- 1 ounce thinly sliced pancetta, finely chopped (1/4 cup)
- 1/2 onion, finely chopped (about 3/4 cup)
- 1 garlic clove, minced
- 3/4 cup fresh fine bread crumbs
- Coarse salt and freshly ground pepper
- 1 large whole egg plus 1 large egg yolk
- 1 Tbsp. finely chopped fresh sage
- 1 tsp. finely grated lemon zest
- Olive oil, for frying

Gather ingredients. The juice I bought was sweetened already so I omitted the sugar
- 6 T Agar Agar Powder (not flakes)
- 2 C Unsweetened Fruit Juice
- Pinch of Salt
- 2 T Granulated Sugar (not a liquid sweetener since it’ll change the consistency)
- Silicon Ice Cube Trays (I got mine in the dollar section of Target)

- 1 cup (8 ounces) fat-free plain yogurt
- 1/4 cup minced fresh parsley
- 1/2 tsp. minced garlic
- 1/8 tsp. salt
- 1 tsp. dried oregano
- 1 tsp. minced fresh rosemary
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 pound boneless beef sirloin steak, cut into thin strips
- 1 large sweet onion, sliced
- 4 tsp. olive oil, divided
- 4 whole gyro-style pitas (6 inches), warmed

- 1/4 cup chopped celery

- 1-1/2 cups sliced fresh mushrooms

- 1-1/4 cups uncooked long grain rice
- 2-1/2 cups water
- 1-1/2 tsp. rubbed sage

Preheat the oven to 350 degrees F
- 4 pounds ground turkey
- 3 cups bread crumbs
- 3 large eggs
- 1/2 cup skim milk
- 1 1/2 cups chopped fresh parsley
- 4 to 6 garlic cloves, finely chopped
- 1/2 to 1 cup grated Parmesan or Romano cheese
- Salt and pepper to taste
- Chopped fresh basil to taste
- 1 pound fat-free mozzarella cheese, cut into 3/4 inch chunks
Sausage Lentil Soup

In a large saucepan coated with cooking spray, cook and stir onion and celery over medium-high heat for 2 minutes
- 1 medium onion, chopped
- 1 celery rib, chopped
- 1/4 pound reduced-fat smoked sausage, halved and thinly sliced
- 1 medium carrot, halved and thinly sliced
- 2 garlic cloves, minced
- 2 cans (14 1/2 ounces each) reduced-sodium chicken broth
- 1/3 cup water
- 1 cup dried lentils, rinsed
- 1/2 tsp. dried oregano
- 1/4 tsp. ground cumin
- 1/4 tsp. ground pepper
- 1 can (14 1/2 ounces) stewed tomatoes, cut up
- 1 Tbsp. Worcestershire sauce
- 1 cup chopped fresh spinach

- 1 jar (3 ounces) pimientos, drained and diced
