Roasted Brussel Sprouts and Apples

Toss brussels sprouts and apple slices with olive oil, salt, and pepper on a rimmed baking sheet
- 1 lb. brussels sprouts, trimmed and halved lengthwise
- 1 apple, cored and sliced (Fuji or Braeburn works well)
- 1 tbsp. olive oil
- salt + pepper to taste
- 1/4 c. dried cranberries
- 1/4 c. chopped walnuts
- 1 tbsp. maple syrup
Creamy herb Dressing

Mix ingredients and refrigerate before serving
- 1/4 c olive oil
- 1 large tomato, quartered
- 1/4 c lemon juice
- 2 large garlic cloves, crushed
- 1/2 t salt
- 1 T fresh thyme
- 1 T fresh tarragon
- 1/2 t ground paprika
- 4 t xylitol
- 2 T sesame seeds
Pumpkin Pancakes (Grain Free)

Instructions Warm a cast iron pan over medium high heat
- 2 eggs
- 1/4 cup pumpkin puree (GAPS legal canned pumpkin puree or homemade)
- 1/8 tsp. cinnamon
- Coconut oil for the pan
- Raw butter, raw honey, maple syrup, or fruit butter for serving
Smoky Quinoa Chili

1. In a soup pot, saute onion, bell pepper, and garlic in oil; cook until the onions have become translucent
- 1 cup prepared quinoa
- 1 cup cooked kidney beans
- 2 cups cooked black beans
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 Tbs. olive oil
- 2 cans (14.5 oz) of diced tomatoes
- 2 Tbs. chili powder
- 1 tsp. red pepper flakes
- 1/2 tsp. each salt & pepper
- 1 cup vegetable broth
Mild mustard

Combine dry mustard and water in saucepan and allow to stand for 10 minutes
- 2 t dry mustard powder
- 1 c water
- 3 t arrowroot
- 1/4 t turmeric
- 1/4 t salt
- 1 t lemon juice

- 1 cup unsweetened vanilla almond milk
- 1 tsp white or apple cider vinegar
- 3/4 cup raw turbinado OR granulated sugar
- 1/4 cup canola or melted coconut oil
- 2 tsp pure vanilla extract
- 1 cup + 1 heaping Tbsp whole wheat pastry flour or unbleached all-purpose flour
- scant 1/2 cup unsweetened cocoa powder + more for topping
- 1 tsp baking soda
- 1/2 tsp baking powder

- 2 cups cooked brown rice
- 1 can (15 oz.) chickpeas
- 1 small leek, cleaned, greens removed &thinly sliced
- 2 cloves roasted garlic, minced
- 1/4 – 1/2 cup chopped fresh parsley
- 1/4 – 1/2 tsp. red pepper flakes
- 2 tsp. ground cumin
- 2 tsp. ground coriander
- 3 Tbs. lemon juice
- 1 Tbs. flax oil
- salt & pepper (to taste)
- 2 Tbs. toasted sesame seeds
- Additional options: chopped cucumber, tomato, or tahini sauce, if desired
Carne Asada Marinade

Mix all ingredients with a whisk or with a hand mixer with the whisk attachment until thoroughly combined
- 1/2 cup olive oil
- 1/3 cup soy sauce
- 4 scallions, finely chopped
- 1/2 teaspoon garlic powder
- Juice of 1 Meyer lemon or 2 limes
- 1/2-3/4 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin
- 3 tablespoons dark brown sugar
