Coconut Pancakes

Mix all the dry ingredients for the pancakes together first
- Syrup:
- 1/4 cup Nutiva Organic Coconut Flour
- 1/4 cup Nutiva Organic Chocolate HempShake
- 1/2 cup almond milk vanilla unsweetened (or coconut milk would work
- 1/4 cup water cold, filtered
- 1/2 tsp cinnamon
- pinch guar gum
- 1 Tbsp Nutiva Organic Chia Seeds
- 1 Tbsp Nutiva Organic Coconut Manna
- 2 Tbsp maple syrup
Detox Quinoa Salad

In a large bowl, mix together all the salad ingredients
- for the dressing:
- 4 cups arugula
- 1 cup cooked quinoa
- 1 cup cooked beets (preferably organic), diced
- 1 (15 oz) can chickpeas, drained and rinsed
- Juice of 1 lemon
- 2 tablespoons tahini
- 1 tablespoon coarse mustard
- 1 tablespoon water
- Salt & pepper to taste
Slow Cooker Root Vegetable Stew

1. Heat the oil in a large frying pan over medium heat until shimmering
- 1/4 cup olive oil
- 2 medium yellow onions, large dice
- Kosher salt
- 1 1/4 teaspoons ground ginger
- 1 (3-inch) cinnamon stick
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1/8 teaspoon cayenne pepper
- Pinch saffron threads
- Freshly ground black pepper
- 1 pound Yukon Gold potatoes (about 3 large), large dice
- 1 pound carrots (about 4 to 5 medium), peeled and large dice
- 1 pound parsnips (about 4 medium), peeled and large dice
- 3 cups low-sodium chicken or vegetable broth
- 2 pounds sugar baby pumpkin or butternut squash (about 1 small), peeled, seeded, and large dice
- 1 pound sweet potatoes (about 2 medium), peeled and large dice
- 1 (15-ounce) can chickpeas, also known as garbanzo beans, drained and rinsed (about 1 1/2 cups)
- 1/2 cup golden raisins, also known as sultanas
- 1 bunch spinach, trimmed and washed (about 4 cups loosely packed)
- 1 1/2 tablespoons cider vinegar, plus more as needed
Italian Kale with Cranberries and Pine Nuts

Wash the kale and dry in a salad spinner or pat with kitchen towels
- 1 bunch Italian kale (also called dinosaur kale or lacinto kale)
- 1 Tbs olive oil
- 2-3 cloves garlic, sliced thinly
- 1 Tbs balsamic vinegar (or more if needed)
- dried cranberries
- 2 Tbs pine nuts, lightly toasted
- salt and pepper

- 3 T peanut or canola oil
- 1/2 t TSTE Whole Yellow Mustard
- 1/2 lb grated or shredded carrots
- 2-3 pieces of TSTE Crystalized Ginger, crumbled or coarsely grated
- 1/2 t TSTE Fleur de Sel Sea Salt
- 1/4 t TSTE Ground Cayenne Chili Pepper
- 1 t fresh lime juice

- salt
- 1 tsp olive oil
- 1 small onion, diced
- 1 clove garlic, minced
- 2 eggs, beaten
- 4 cups slightly undercooked quinoa (1 cup dry, cooked according to package directions)
- 8 ounces feta, crumbled
- 3 scallions, thinly sliced (1/2 cup)
- 1/4 cup chopped dill
- freshly ground pepper
GREEN BEAN + BLACK QUINOA SALAD

1. In a blender or food processor, whirl all of the dressing ingredients together

- 1/4 Cup Extra Virgin Olive Oil
- 3 Tbsp. White Balsamic
- 2 tsp. Agave Nectar / Honey
- 1 Clove Garlic
- Handful of Basil Leaves
- Pinch of Salt + Pepper
- 1/2 Cup Quinoa (black or red is pretty, but any color works)
- 1 lb. Green Beans, ends trimmed
- 2 Scallions/Green Onions
- 1/2 Cup Hazelnuts, toasted and skins removed, roughly chopped
Roasted Sunshine Veggies

Spray roasting pan with coking spray
- 8 cups large diced vegetables (sweet potatoes, white potatoes, brussel sprouts, red or green pepper, onion, zucchini, yellow squash, etc.)
- Cooking spray
- 4 teaspoons Olive Oil
- 4 tablespoons white wine vinegar
- 2 tablespoons melted butter
- 3 cloves garlic sliced
- 1 teaspoon Florida Sunshine blend
- 2 teaspoons California Blend
BBQ Lentil Veggie Burger and Mango Slaw

Burger Patties 1. Wash the lentils and add to pan with water, garlic, salt and BBQ sauce
- Spices:
- 1/2 cup red, pink, or orange lentils + 1 cup water
- generous pinch of garlic powder and salt
- 1 Tbsp. smoky BBQ sauce (try homemade)
- 1 heaping cup grated cauliflower
- 3-4 baby carrots
- 2 cloves of garlic
- 1/2 inch knob of ginger
- 1 green chili or chili flakes to taste
- 2-3 inch broccoli stem, chopped very small or grated
- 3-4 Tbsp. chopped red or orange bell pepper
- 1 Tbsp. smoky BBQ sauce
- 1/4 - 1/2 tsp. chipotle pepper powder
- 1 tsp. onion flakes
- 1/4 tsp. cumin powder
- 1/2 tsp. salt
- 1 Tbsp. flax meal
- 1 Tbsp. sesame seeds
- 1/4 cup chickpea flour
- 2-4 Tbsp. breadcrumbs
- Mango Slaw: ripe mango, carrot, cabbage, Vegenaise vegan mayo (adjust amounts to your liking)

- 4 cups red bell pepper
- 1 bunch cilantro
- 1 avocado
- 1/4 small cucumber
- Warm water to blend
