Sweet and Spicy Soup with Black-Eyed Peas and Sweet Potato

Set oven to broil. Brush red bell pepper lightly with olive oil, and place cut-side down on a baking sheet
- 1/2 red bell pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 celery stalk, chopped
- 2 cloves garlic, minced
- 1 cup water
- 1 cup vegetable broth
- 3 plum tomatoes, chopped
- 1 (15 ounce) can black-eyed peas, drained and rinsed
- 1 (15 ounce) can sweet potatoes, drained and cut into chunks
- 1 tablespoon brown sugar
- 1 1/2 teaspoons cinnamon
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon crushed red pepper flakes
- 1 bay leaf
- 1 pinch dried thyme
- 1 pinch dried basil
- 1 pinch dried oregano
- 1 pinch dried rosemary
- 1 pinch garlic powder
- 1 pinch onion powder
- 1 pinch mustard powder
- 1 pinch cumin
- 1 pinch coriander
- salt and cracked black pepper to taste
- 2 tablespoons chopped fresh parsley

1. Make the rice as usual and set aside
- 1 1/2 cups Long Grain Brown Rice, Prepared as Usual
- 1 Medium Carrot, Chopped
- 1 Small Onion, Minced

- 1/2 cup softened (not melted) butter or coconut oil
- 1/4 to 1/3 cup Pure Cane Sugar
- 1 large egg

Carob Balls

Soak almonds and walnuts in 1/2 c warm water for 30 mins and then drain

- 1/2 cup almonds
- 2 T carob powder
- 1 T agave or honey
Quinoa Slaw

Start by whisking all the dressing ingredients together in a small bowl
- 1 head napa cabbage
- 1 small jicama
- 3 large carrots, crated
- 1 bunch scallions, chopped
- 1 cup cooked quinoa
- 1/2 cup pepitas or sunflower seeds
- 1/4 cup rice vinegar
- 1/4 cup orange juice
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 teaspoons ground ginger
- Chili peppers to taste (I used about 1 teaspoon)

- 1 1/2 pounds golden or red beets, trimmed and cut into 1-inch pieces or wedges

- 2 tablespoons chopped fresh or 2 teaspoons dried herbs, such as marjoram, oregano and/or rosemary
- 1 teaspoon freshly grated lemon zest
- 1/2 teaspoon salt

- 1 pound beets, peeled and diced
