- 4 Tbsp All Purpose Flour
- 1 14oz (400ml) Can Coconut Milk
- 1/3 cup (80ml) Vegetable Stock
- 1/2 tsp Salt
- 1 tsp Black Pepper
- 1 tsp Dijon Mustard
- 1/2 Pack (~9oz/250g) Penne Pasta*

- Mushrooms:
- 4 tablespoons butter
- 8 ounces (250 grams) brown mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley chopped
- Salt and pepper, to taste
- Chicken:
- 4 chicken breasts, skinless and boneless
- Salt and pepper, to season
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
- 8 slices mozzarella cheese
- 1/4 cup fresh grated parmesan cheese
- Garlic Parmesan Cream Sauce:
- 1 tablespoon olive oil
- 2 large cloves garlic minced or finely chopped
- 1 tablespoon Dijon mustard
- 1-1/2 cups half and half or use reduced fat cream or evaporated milk*
- 1/2 cup finely grated fresh Parmesan cheese
- Salt and pepper, to your tastes
- 1/2 teaspoon cornstarch cornflour mixed with 2 teaspoons of water (OPTIONAL FOR A THICKER SAUCE)
- 2 tablespoon fresh chopped parsley
Smoothie - Strawberry Banana Coconut

Put all the ingredients in the blender and puree until a smooth mixture is obtained
- 1 fresh banana
- 1 c. fresh or frozen strawberries
- 2 c. coconut water or filtered water
- 1 tbsp pollen

Cook and drain noodles. Add back to warm pot, stir in butter, cheese soup, and half the can of evaporated milk
- 1 16oz box pasta (shells, macaroni, bow tie) I used 3/4 or 12 oz for this recipe
- 4 Tablespoons butter
- 1 can cheddar cheese soup(10 3/4 oz)
- 1 can evaporated milk (12 oz)
- 1-2 cups grated cheddar cheese
- Salt and pepper to taste or seasoned salt

- 1 lb sweet potatoes, peeled and diced into small cubes (1/2-inch)

- 1 (14.5 oz) can black beans, drained and rinsed
- 1 1/2 cups frozen corn
- 2 tsp ancho chili powder, divided
- 2 tsp ground cumin, divided
- 1/8 tsp cayenne pepper
- Salt and freshly ground black pepper
- 1 lb boneless skinless chicken breasts, diced into 1-inch cubes
- 3 Tbsp fresh lime juice
- 2 Tbsp honey
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/3 cup chopped cilantro
- Cooked brown rice, for serving (optional)

- 1 small, chopped onion
- 1 chopped green pepper
- 10 sliced mushrooms
- 1 cup fresh or frozen broccoli (optional)
- 1 deep dish lower-fat frozen pie shell
- 1/2 cup grated low-fat Cheddar cheese
- 4 to 5 large eggs
- 1/2 cup 1% milk
- fresh ground pepper to taste
