First, cook your quinoa according to the directions on the packaging
- 1/2 cup quinoa
- 1 cup water
- 5 large broccoli florets
- 1 small onion, diced
- 1/4 cup breadcrumbs
- 1/4 cup shredded cheese
- 1 large egg
- Salt and Pepper for seasoning
- Olive oil for cooking
Spinach Salad

Place a large bed of baby spinach leaves on a plate
- Baby spinach leaves (these taste less bitter than regular spinach leaves)
- Assortment of salad veggies (onions, cucumbers, tomatoes, etc.)
- 2 tablespoons of reduced-fat crumbled feta cheese
- 1 tablespoon olive or flaxseed oil
- 2 tablespoons balsamic vinegar
THAI PEANUT CHICKEN - SLOW COOKER

Slow Cooker Thai Peanut Chicken is a creamy, peanut flavor infused chicken that is served over noodles
- 2 cloves garlic minced
- 2/3 cup peanut butter
- 1 cup chicken broth
- 1 lb boneless skinless chicken breasts, cut into 1 inch cubes
- 1 cup shredded zucchini
- 1/3 cup soy sauce
- 1 tsp sugar
- 1 red pepper cut into thin, long strips
- 1 tbsp lime juice
- 1 cup chopped cilantro divided

- 2 cups (500 mL) blueberries, fresh or frozen
- 1/2 cup (125 mL) sea buckthorn berries if available
