Shrimp and Pineapple Not so Po'Boys (Aarti)

Directions In a large bowl, toss the shrimp with a hefty sprinkling of salt, and massage gently
- 1 pound large peeled and deveined shrimp
- Kosher salt
- 4 teaspoons Cajun shrimp seasoning (recommended: Cajun's choice)
- 1 tablespoon olive oil
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon fennel seeds
- 1/2 red onion, finely diced
- 1 serrano pepper, seeds and membrane removed, minced
- 1/2 teaspoon turmeric
- 1 (20-ounce) can pineapple chunks, drained, finely chopped
- Small handful minced cilantro leaves
- 1/2 cup mayonnaise
- Cornmeal, for dredging
- Vegetable oil, for frying
- 4 big po' boy buns, split
- Lettuce and sliced tomato, for topping sandwiches
Honeycomb Cannelloni (Jamie Oliver)

First find a pan that will hold all your cannelloni, snugly, standing up
- Salt and pepper
- Parmesan cheese for grating
- 500 g/1lb 2oz good quality cannelloni tubes
- olive oil
- for the sauce
- a small handful of dried porcini
- 150 ml /5.5oz olive oil
- 3 carrots, peeled and diced
- 4 sticks of celery, trimmed and finely diced
- 1 large red onion, peeled and finely diced
- 1 leek, trimmed, outer leaves discarded, finely diced
- 2 cloves of garlic, peeled and sliced
- 5 portobello mushrooms, finely chopped
- 5 x400g tins of tomatoes
- a large bunch of fresh basil, leaves picked, stalks finely chopped
- for the spinach
- 680 g/1&1/2 lb fresh spinach
- nutmeg for grating
- for a quick white sauce
- 285 ml/1/2 pint single cream
- 500 ml/ 17.5 oz crème fraiche
- 4 good quality anchovy fillets in oil, drained and finely chopped
- handful of grated parmesan cheese

- 1 1/3 cups sugar, divided
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon baking powder

- 1/2 cup real butter

Pancetta and Taleggio Lasagna with Treviso

Preparation filling and pasta •Heat oil in heavy large skillet over medium heat

- •3 tablespoons extra-virgin olive oil
- •8 ounces thinly sliced pancetta (Italian bacon), chopped
- •2 cups thinly sliced celery hearts
- •1 2/3 cups chopped onion
- •1 pound Treviso radicchio or red endive (4 medium heads), quartered lengthwise, cored, then cut on diagonal into thin strips (about 6 cups), divided
- •3 teaspoons chopped fresh thyme, divided
- •1 garlic clove, finely chopped
- •9 lasagna noodles (each 7x3 inches)
- sauce
- •1/4 cup (1/2 stick) unsalted butter
- •2 1/2 tablespoons all purpose flour
- •2 cups whole milk
- •Pinch of ground nutmeg
- •Pinch of ground white pepper
- •12 ounces Taleggio cheese,* rind removed, cheese cut into 1/2-inch cubes
- •1/2 cup finely grated Parmesan cheese, divided
- •2 tablespoons coarse dry breadcrumbs (preferably from crustless Italian bread)
- •Olive oil
- •*A semisoft cheese; available at some specialty foods stores and at Italian markets.

- 1 stick butter
- 1 1/2 cups sugar
- 1 cup heavy cream
- 1/2 cup whisky
- 1 tsp vanilla extract

- 1/4 cup (1/2 stick) unsalted butter
- 1 teaspoon extra-virgin olive oil
- 2 large onions (about 1 1/3 pounds total), halved through root end, thinly sliced lengthwise
- Fine sea salt
- 1 16-ounce container sour cream
- 1 8-ounce container crème fraîche*
- 1/2 cup fromage blanc or cream cheese
- 3/4 teaspoon ground chipotle chile powder**

Directions Whisk the yogurt until smooth
- 2 cups plain whole milk or low-fat yogurt
- 2 cups grated English or Persian cucumber (unpeeled)
- 1 clove garlic, minced
- 4 sprigs fresh mint, leaves only, minced finely
- 1 teaspoon kosher salt
- 2 tablespoons golden raisins
- Freshly ground black pepper
Maple Vinaigrette

Mix all together and cover
- 1/4 cup cider vinegar or red wine vinegar
- 1/4 cup olive oil
- 3 tbsp maple syrup
- 1 tbsp plus 1 tsp dijon mustard
- salt and black pepper

- Glaze:
- 1 medium onion, chopped
- 2 lbs. ground sirloin
- 1 cup mushrooms, sliced
- 2 tsp. salt
- 2 Tbsp. fresh parsley, chopped
- 1 tsp. garlic powder
- 1/4 tsp. black pepper
- 1 cup bread crumbs (I used panko instead)
- 2 eggs, beaten
- 1/2 cup ketchup or barbecue sauce
- 1 Tbsp. brown sugar
- 1 tsp. prepared mustard
