Cranberry Orange Scones (Ina Garten)

Preheat the oven to 400 degrees F
- 4 cups plus 1/4 cup all-purpose flour
- 1/4 cup sugar, plus additional for sprinkling
- 2 tablespoons baking powder
- 2 teaspoons kosher salt
- 1 tablespoon grated orange zest
- 3/4 pound cold unsalted butter, diced
- 4 extra-large eggs, lightly beaten
- 1 cup cold heavy cream
- 1 cup dried cranberries
- 1 egg beaten with 2 tablespoons water or milk, for egg wash
- 1/2 cup confectioners' sugar, plus 2 tablespoons
- 4 teaspoons freshly squeezed orange juice
Jeff's Gumbo

1. On Medium to Low heat the oil then gradually add the flour
- one 8-10lb Smoked Turkey (no need to use all the meat, about 1/2 will do) or one 3-4 lb Smoked Chicken (Carve off all the meat and discard all the skin. Chop the meat into about 1 inch pieces)
- o (I smoke my own so that they are not too salty, but Eddy brand has a very good smoked Turkey)
- 1-2 Links of Sausage
- 2-3 lbs of Shrimp
- Stock (You can either boil the bones from the Turkey or if in a rush add 2 1/2 -3 quarts of chicken broth. I don’t use the skin b/c of all the fat in it)
- 2 packs of Frozen Okra
- 2 tablespoons of Minced Garlic
- 3 Medium White Onions Chopped
- 3 Green Bell Peppers Chopped
- 4 Celery Stalks Chopped
- one 14 1/2 oz can of Whole Crushed Tomatoes (optional)
- 4 Tablespoons of fresh Parsley Minced (I sometimes use dried parsley)
- 6 Bay Leaves
- 1 Lemon (Juiced)
- 1 bunch of Green Onions (trim the green part)
- 2 teaspoons of dried Thyme
- 1 Teaspoon of Cayenne Pepper
- 6 Whole Cloves
- 2-4 Tablespoons of Tony Cachere’s (check the flavor so it is not too salty- usually just need 2)
- 2 small caps full of liquid crab boil (the one in the small 5-6 oz bottle)
- 2 cups of vegetable oil
- 2 cups of flour

Heat oven to 350 degrees. Line two 12-cup muffin tins with cupcake papers and spray lightly with cooking spray
- 2 sticks unsalted butter, at room temp
- 2 cups granulated sugar
- 4 extra large eggs, room temp
- 1 cup whole milk, room temp
- 1/2 cup Greek yogurt, room temp
- 3 tsp vanilla extract
- 3 cups all purpose flour
- 1/3 cup cornstarch
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
Shrimp Burgers with Sweet n Spicy Tartar Sauce

Preparation 1. Peel shrimp; devein, if desired
- 1 1/4 pounds unpeeled, medium-size raw shrimp (31/40 count)
- Vegetable cooking spray
- 1 large egg, lightly beaten
- 1 tablespoon mayonnaise
- 2 teaspoons lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 3 tablespoons finely chopped celery
- 2 tablespoons chopped green onion
- 1 tablespoon chopped fresh parsley
- 1 1/4 cups crushed cornbread crackers (about 1 sleeve or 24 crackers)
- 4 Kaiser rolls with poppy seeds, split
- Sweet 'n' Spicy Tartar Sauce

- 1 1/2 cups celery, peeled and diced
- 1 cup onion, diced
- 1/2 stick butter
- 10 cups cornbread, crumbled (recipe follows)

- 4 cans chicken or turkey broth

Superfast Chicken Posole

1. Heat olive oil in a large saucepan over medium-high heat
- 1 * 1 tablespoon olive oil
- 1 * 1 teaspoon dried oregano
- 3/4 * 3/4 teaspoon ground cumin
- 1/2 * 1/2 teaspoon chili powder
- 2 * 2 garlic cloves, minced
- 1 * 1 (8-ounce) package prechopped onion and celery mix
- 4 * 4 canned tomatillos, drained and coarsely chopped
- 2 * 2 (14-ounce) cans fat-free, less-sodium chicken broth
- 1 * 1 (15-ounce) can white hominy, rinsed and drained
- 2 * 2 cups chopped skinless, boneless rotisserie chicken breast
- 1 * 1 tablespoon fresh lime juice
- 1/4 * 1/4 teaspoon salt

1. Combine sugar, butter, corn syrup, water and salt in a large saucepan over medium heat
- 1 cup granulated sugar
- 4 tablespoons butter
- 1/2 cup corn syrup
- 1/2 cup water
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 1/2 tsp butter flavoring
- 1 1/3 bags butter-flavored microwave popcorn
Nutella Ice Cream

Steakhouse Steak with Roquefort Sauce (Ina Garten)

Directions Preheat the oven to 400 degrees F
- Steaks:
- 4 (10-ounce) filet mignon
- 4 tablespoons vegetable oil
- 2 tablespoon fleur de sel
- 2 tablespoon coarsely cracked black peppercorns
- 4 tablespoons unsalted butter, at room temperature, optional
- Roquefort chive sauce:
- 1 1/2 cups heavy cream
- 2 ounces French Roquefort cheese, crumbled (4 ounces with rind)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh chives
Spanish Rice for Rice Cooker (Aroma)

- 3 cups Uncooked white rice
- 1 1/2 lb Ground beef (browned)
- 1 med. Onion
- 1 small can diced green chilies
- 1 reg can of diced tomatoes
