Herb-Roasted Chicken

Preheat oven to 375 degrees
- 2 T. butter
- 1 t. dried sage
- 1 clove garlic, crushed
- 1/8 t. black pepper
- 1 whole chicken
- 1 t. dried rosemary
- 1 onion, peeled
- 2 cups chicken broth
- 6 oz. new potatoes, parboiled
- 3 bell peppers, deseeded and cut into quarters
- 2 medium zucchini, cut into chunks
- 1 red onion, sliced
- 1 T. olive oil
- Parsley for garnish

Preheat oven to 325 degrees
- 2 1/3 cup all-purpose flour
- 1/3 cup pecans, toasted/chopped
- 1/2 cup sugar
- 1 t. vanilla extract
- 1 ½ t. baking powder
- 1/2 t. grated fresh lemon peel
- salt
- 2 large eggs
- 1/2 cup cold butter
- 1 cup dried cherries or other dried fruit,
- chopped
- 1 cup part-skim ricotta cheese
- confectioner’s sugar
Pecan Praline Cookies

Place crackers on ungreased 10x15 sheet cake pan, covering bottom
- 35 graham crackers
- 1 cup packed brown sugar
- 1 cup butter
- 1/4 t cream of tartar
- 1 cup chopped pecans
Lemon Grilled Chicken

Use a peeler to remove strips of zest from half of the lemon, then trim into fine strips with a small knife
- 1 lemon
- 2 T. olive oil

- 1/4 t. dried marjoram

Crust: 1. Preheat oven to 325
- Crust:
- 2 1/4 C graham cracker crumbs
- 10 T salted butter, melted
- 3 T sugar
- Cheesecake Fillilng:
- 24 oz. cream cheese, room temp
- 1 C sugar
- 3 T AP flour
- 1 C sour cream, room temp
- 1 1/2 T vanilla extract
- 1 T grated lemon zest (2-3 med lemons)
- 4 large eggs, room temp
- Lemon Topping:
- 8 T lemon juice (3-4 med lemons)
- 4 t grated lemon zest
- 1/2 C sugar
- 8 large egg yolks
- 1/4 C salted butter
- Meringue Topping:
- 1 C sugar
- 1/2 t cream of tartar
- 1 t vanilla extract
- 4 large egg whites
Chocolate Chip Cheesecake

In a bowl, combine the first five ingredients; stir in butter
- Crust:
- 2 cups vanilla wafer crumbs
- 1 cup flaked coconut, toasted
- 1/2 cup finely chopped walnuts
- 1/4 cup sugar
- 3 T. baking cocoa
- 1/3 cup butter, melted
- Filling:
- 4 pkg. (8 oz. ea.) cream cheese, softened
- 1 cup sugar
- 4 t. cornstarch
- 4 eggs
- 1/3 cup whipping cream
- 3 t. vanilla extract
- 1 1/2 cups miniature semisweet chocolate chips
- Topping:
- 3 squares (1 oz. ea.) semisweet chocolate, melted
- 1 T. butter, melted
- 1 cup powdered sugar
- 1/4 cup whipping cream

Preheat oven to 350 degrees
- 6 skinless, boneless chicken breast halves
- 6 ounces tomato basil feta cheese, crumbled
- 1/4 cup Italian style dry bread crumbs, divided
Lorena's Favorite Spaghetti Sauce

Combine all ingredients in crock pot; stir well
- 2 pounds ground beef, browned
- (or 1 beef, 1 pork sausage)
- 1 1/2 T. Italian seasoning
- 4 to 6 garlic cloves, minced
- 2 onions, chopped
- 2 sm. cans sliced mushrooms, optional
- 1/2 cup chopped parsley
- 3 cans (8 oz. ea.) tomato sauce
- 2 cans (6 oz. ea.) tomato paste
- 1 cup dry red wine
- 2 to 3 t. salt
Crispy Banana Pops

Line a large plate with foil
- 2 medium bananas
- 1/4 cup crisp rice cereal (or any favorite cereal, crushed)
- 1/4 cup mini chocolate chips
- 2 T. finely chopped peanuts
