Guacamole Salad

Chop onion, tomato and avocado fine (use hand beater or mixer for a better texture) Add remaining ingredients
- 1 small onion
- 1 tomato
- 2-1/2 tspn salt
- 6 avocados, peeled
- 2 tspn lemon juice (optional - depends on when you want to eat it)
- 2 Tbsn Mayonnaise (I use Miracle Whip)
- 1 tspn salad oil
- 4 drops tabasco sauce
Chop Suey

Brown meet in hot fat in cooker
- 2 lbs. Pork, Veal or Beef (1 " cubes)
- 1/2 cup soy sauce
- 5 tablespoons cornstarch
- 1/2 cup water
- 1 large can chop suey vegetables
- 1 regular size can fancy chop suey vegetables
Tuna Noodle Casserole

Stir soup, milk, peas, tuna and noodles in a 3-qt
- 2 cans (10-3/4 oz each) Cream of Mushroom Soup
- 1 cup milk
- 2 cups frozen peas
- 2 cans (about 6 oz. each) tuna, drained
- 4 cups hot, cooked medium egg noodles
- 2 tbsp. dry bread crumbs
- 1 tbsp. butter, melted
Maria's Spaghetti

Brown the meat and drain off fat
- Classico brand Tomato and Basil Spaghetti Sauce
- Ground Meat or meatballs
Ranch chicken

Brown skinless chicken breasts in small amount of olive oil
- 2-6 skinless chicken breasts
- 1 large onion
- 1/2 green pepper
- 1/2 cup celery
- 1 can Italian style tomato sauce (soup can size)
- 1/2 cup water
- 1 can mushrooms and liquid
- 1 tsp. chopped parsley
- Grated cheese
Wilted Lettuce Salad

Fry bacon and leave grease in the pan
- Lettuce
- 2 or 3 green onions
- sugar
- salt & pepper
- Mix and put in frig
- 3 pieces bacon cubed
- 1/4 cup Vinegar
- 2 Tblspns water
Spanish Chili

Brown meat with salt and pepper, cumin and sprinkle garlic powder like salt on the first side
- 2 lbs ground chuck
- 2 big cans of tomatoes
- 1 big can of pinto beans
- 2 tablespoons cumin seeds ground to medium in spice grinder or use a blender
- garlic powder
- salt and pepper
- 1 tablespoon chili powder
- 1-1/2 cups elbow macaroni noodles
Eggs bene-chick

To make sauce, combine mayo, Dijonnaise, butter, and yogurt
- 1/2 light English muffin
- 1 large egg
- 1 slice extra-lean ham
- 1 tablespoon fat-free mayonnaise]
- 1 teaspoon Hellmann's/Best Foods Dijonnaise
- 1 teaspoon light whipped butter or light buttery spread, softened
- 1 teaspoon lemon yogurt (or plain yogurt with a squirt of lemon juice)
Shrimp Salad

Mix all ingredients and refrigerate for at least a half hour before serving
- 14 oz. frozen salad shrimp (unthawed)
- 1/3 cup mayo or miracle whip
- 2 Tblspns lemon juice
- 2 or 3 scallions (chopped)
- 2 stalks celery (chopped)
- 2 hard boiled eggs (sliced)
- Salt & pepper
