- 1/2 cup beer

Orange-Avocado Chicken Breasts

Melt margarine in a medium sized fry pan over medium heat
- 4 chicken breast halves
- 2 tablespoons margarine
- 1/2 teaspoon grated orange peel
- 2/3 cup orange juice, divided
- 1/3 cup chopped onion
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/3 teaspoon ground ginger
- 1/3 teaspoon tarragon leaves, crushed
- 1 tablespoon cornstarch
- 1 orange, peeled, sliced crosswise
- 1 small avocado, peeled, pit removed and sliced
Chicken Enchilada Skillet

Spray large nonstick skillet with cooking spray
- 1 Can (12.5 oz) Chunk Chicken Breast, shredded
- 1 can (10 oz.) Diced Tomatoes & Green Chilies (chilies optional) undrained
- 1 can (10 oz.) Red Enchilada Sauce
- 1 can (8 oz.) Tomato Sauce
- PAM Original No-Stick Cooking Spray
- 12 corn tortillas, torn into bite-size pieces
- 1 cup shredded Fiesta Blend cheese, divided
Chicken & Dumplings

Brown chicken pieces and set aside
- 2 fryers cut in pieces
- 1/2 cup diced onion
- 1/4 cup celery
- 2 Tablespoons celery leaves
- 1/4 cup flour
- 4 cups chicken broth
- 1 teaspoon sugar
- 2 teaspoons salt
- 1/4 teaspoon pepper
- 1 teaspoon basil
- 2 bay leaves
- 1/4 cup chopped parsley
Tuna Rice Casserole

1. Stir the soup, milk, paprika, red pepper, tuna, cheese and rice in a 9 inch square baking dish
- 1 Can cream of mushroom soup
- 1-1/2 cups milk
- 1 cup frozen peas
- 1/4 teaspooon paprika
- Dash ground red pepper
- 2 ans (about 6 ounces each) tuna drained
- 4 ounces sliced American cheese, cut up (about 1 cup)
- 3/4 cup uncooked regular long-grain white rice
- 2 tablespoons dry bread crumbs
- 1 tablespoon butter, melted
Stewed Tomatoes

Sterilize canning jars and keep warm In large saucepot, combine all ingredients
- 16 Cups tomatoes, peeled and cut into large pieces
- 1 cup chopped onion
- 1-1/2 cups chopped celery
- 1 medium green pepper, seeded and chopped
- 3 teaspoons sugar
- 2 teaspoons canning salt
- 1 teaspoon celery salt
