Spaghetti & Chicken in Roasted Garlic Sauce

Preheat oven to 350°F. Place unpeeled garlic cloves on a piece of aluminum foil
- 6 large clove garlic
- 1 Tbs chicken broth
- 8 oz spaghetti pasta
- 4 oz Nestlé® Carnation® Evaporated Milk
- 2 Tbs cornstarch
- 1 lb fresh boneless, skinless chicken breasts, cut into 1/2-inch dice
- 1 1/2 cups chicken broth, divided
- 1 cup sliced mushrooms
- 2 Tbs thinly sliced green onion
- 1/2 tsp crushed red pepper flakes
- 1 Tbs chopped fresh sage
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 3 Tbs nonfat sour cream

In a large, heavy-bottomed saucepan, beat together the eggs and sugar
- 10 large eggs
- 2 1/4 cups granulated sugar
- 2 cups half-and-half
- 2 cups heavy cream
- 1/4 tsp freshly grated nutmeg plus some for garnish
- 1 tsp pure vanilla extract
- 1/4 cup bourbon
- 1/4 cup brandy
- 6 large egg whites
Spaghetti Sauce

Heat 1 tablespoon oil in medium skillet over medium heat
- 2 Tbs vegetable oil divided
- 1/2 lb ground turkey
- 1 Small onion chopped
- 1 Small green bell pepper seeded and chopped
- 1 Clove garlic crushed
- 2 14-Ounce Cans plum tomatoes with juice
- 1 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp pepper
Pan Gravy

After transferring roast turkey to a serving platter, pour pan drippings into a large measuring cup
- 1/4 cup pan drippings from roast turkey
- 1/4 cup all-purpose flour
- 1 1/2 cup chicken broth or water
Spaghetti with Mushroom Clam Sauce

Using fresh mushrooms, approximately 1/2 pound, sauté with onion and garlic in oil
- 2 1/2 cups Fresh Mushrooms, sliced
- 1/3 cup Onion, diced
- 3/4 tsp Garlic, finely minced
- 1/2 cup Salad or Olive Oil
- 10 1/2 oz can Minced Clams or 1 dozen Cherrystone Clams
- 2 Tbs Sweet Pepper Flakes
- 1/2 lb Spaghetti, cooked
- 1/8 tsp Thyme Leaves
- 1 1/2 cups Water
- 16 oz can Tomato Paste
- 1 medium Tomato, diced
- 2 1/2 tsp Salt
- 1/4 tsp Ground Black Pepper
- 1 cup Mozzarella Cheese, shredded
Chicken Crunch

Preheat oven to 400°F. Combine 1/3 of the soup with milk in a shallow dish
- 1 (10.75-oz.) can cream of chicken condensed soup, divided
- 1/4 cup 2% milk
- 4 (4-6-oz.) fresh boneless, skinless chicken breasts
- 2 Tbs flour
- 1 1/2 cups stuffing mix, crushed
- 2 Tbs butter or margarine, melted
Parmesan Smashed Potatoes

Place the potatoes and 1 tablespoon of salt in a 4-quart saucepan with cold water to cover
- 3 lbs red potatoes, unpeeled
- 1 Tbs kosher salt plus 2 teaspoons
- 1 1/2 cups half-and-half
- 1/4 lb (1 stick) unsalted butter
- 1/2 cup sour cream
- 1/2 cup freshly grated Parmesan
- 1/2 tsp freshly ground black pepper
Spiced Roast Chicken

Preheat oven to 375°F. Remove skin from chicken and discard; place chicken in a bowl and set aside
- 2 fresh whole chicken, about 3 pounds each
- 1 diced peeled onion
- 4 Tbs lemon juice
- 2 clove garlic, peeled and chopped

- 1 tsp chili powder

Pear Clafouti with Star Anise

- 1/2 vanilla bean, split lengthwise
- 3 large eggs
- 1/2 cup sugar
- 6 Tbs flour, plus more to dust pan
- 3/4 cup whipping cream, creme fraiche, or plain yogurt
- 3/4 cup whole milk
- 3 star anise, ground in a coffee grinder
- pinch salt
- 1 tsp butter
- 4 ripe pears, about 6 ounces each, peeled
- 1 tsp pear eau du vie or brandy (optional)
- Confectioners' sugar
