Low-Fat Honey Crepes

Combine all ingredients in a blender or food processor; blend until smooth
- 2 cups nonfat milk
- 1 cup all-purpose flour
- 2 egg whites
- 1 egg
- 1 Tbs honey
- 1 Tbs vegetable oil
- 1/8 tsp salt
Bacon and Tomato Potato Skins

Scrub potatoes thoroughly and prick with a fork
- 6 large baking potatoes
- 2 tsp cooking oil
- 1 tsp chili powder
- Several dashes bottled hot pepper sauce
- 2/3 cup chopped Canadian-style bacon or chopped, cooked turkey bacon
- 1 medium tomato, finely chopped
- 2 Tbs finely chopped green onion
- 4 oz cheddar cheese or reduced-fat cheddar cheese, shredded (1 cup)
- 1/2 cup dairy sour cream (optional)
Pumpkin Won Ton

Heat the oil in a skillet over medium-high heat
- 2 tsp peanut oil
- 2 tsp minced fresh parsley
- 2 garlic cloves, minced
- 1/2 cup minced onion
- 2 tsp lemon juice
- 1 tsp minced fresh rosemary
- 1 Tbs minced golden raisins
- 2 cups canned pumpkin
- 1 tsp cinnamon
- 18 won ton wrappers
- 1 Tbs peanut oil
Baked Custard

Preheat oven to 350° F. Combine eggs, sugar and salt in large mixer bowl
- 4 large eggs
- 1/2 cup granulated sugar
- 1/2 tsp salt
- 1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
- 1 cup water
- 1 tsp vanilla extract
- Ground nutmeg
Ratatouille

Heat the oil in a large skillet and saute the onion, bell pepper, and garlic for 3 to 4 minutes
- 1 Tbs olive oil
- 1 cup chopped onion
- 2/3 cup finely-chopped bell pepper
- 1 garlic clove, chopped
- 1 1/2 lbs eggplant, peeled, and cut in 1/2" cubes
- 1 lb zucchini, unpeeled, and cut in 1/2" slices
- 1 tsp basil
- 1 tsp marjoram
- 3 medium tomatoes, peeled, quartered
- 1/2 tsp salt
- 1/4 tsp freshly-ground black pepper
- 2 Tbs Parmesan cheese
Mexican Coffee

Combine coffee, half-and-half, honey, cocoa and cinnamon in blender and blend 1 minute on high
- 4 cups hot espresso-style coffee
- 3/4 cup half-and-half
- 1/2 cup honey
- 2 Tbs unsweetened cocoa
- 1 tsp ground cinnamon
- Sweetened whipped cream
- Chocolate shavings
Red Velvet Cake

Heat the oven to 350 degrees
- 1/2 cup shortening
- 1 cup sugar
- 1 cup egg substitute
- 2 Tbs cocoa
- 1 1/2 Tbs red food coloring
- 1 tsp vanilla
- 2 1/2 cups flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup low-fat (1%) buttermilk
- 1 Tbs vinegar
- 1 cup reduced-fat whipped topping
Mocha Date Shake

Combine all ingredients except ice cream in blender and puree until dates are finely chopped
- 1/2 cup whole, pitted dates
- 1/2 cup 1% lowfat milk
- 1 1/2 tsp chocolate syrup
- 3 scoops coffee ice cream
