  • 2 lbs, pork shoulder cubed

  • 3 1/2 cups dry chickpeas,, soaked in water overnight and drained
  • Add:
  • 1 can artichokes hearts, drained and chopped
  • 1 cup quartered zucchini
  • 1/2 cup pitted, chopped kalamata olives
  • 1/2 cup chopped pepperoncini
  • zest and juice of 1 lemon
  • plain Greek-style yogurt
  • Whole pepperoncini

  • 1/2 cup whole wheat flour
  • 1/2 cup dry-roasted sunflower kernels
  • 1/2 cup flaxseed meal
  • 2 tbsp sesame seeds
  • 2 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 egg, lightly beaten
  • 1 1/4 cups buttermilk, or "sour milk" View tip.
  • 1/4 cup vegetable oil
  • 4 tsp sesame seeds, poppy seeds, and /or dry-roasted sunflower kernels.
