Salmon with Brown Sugar and Mustard Glaze

- 3 tablespoons light brown sugar
- 1 tablespoon honey
- 2 tablespoons butter
- 1/4 cup Dijon mustard
- 2 tablespoons soy sauce
- 2 tablespoons olive oil
- 1 tablespoon finely grated ginger
- Vegetable oil
- Salt and freshly ground black pepper
- 8 salmon fillets, 6 ounces each

- 1/2 cup chopped pecans
- 1/3 cup packed brown sugar

- 1 onion, diced
- salt and ground black pepper to taste

- 1/2 cup extra-virgin olive oil
- 1/2 cup cider vinegar
- 2 tablespoons seafood seasoning (recommended: Old Bay)
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 tablespoon whole grain mustard
- 1 large Fresno chile, thinly sliced
- 4 cloves garlic, grated or pressed
- 1 lemon, thinly sliced
- 1 medium red onion, thinly sliced
- 1 tablespoon kosher salt
- 3 pounds medium shrimp, tail on, shells removed, deveined
- Lemon Chive Aioli, recipe follows
- 2/3 cup mayonnaise
- 3 tablespoons lemon juice

Ham and Leek Empanadas

Made once and it was very good, but only made 8 empanadas with this recipe
- 1 1/2 tbsp butter, unsalted
- 1 1/2 cups small diced leeks,
- 1/3 cups creme fraiche
- 4 ounces smoked ham, such as black forest, cut into 1-inch dice.
- 4 ounces Gruyere cheese, grated
- 2 ounces (2 cups) baby spinach, chopped
- 2 tbsp julienne basil leaves
- 1/2 cup grated Parmesan cheese
- kosher salt and pepper
- 1 large egg
- 2 tbsp milk
- all-purpose flour, for rolling
- 3 sheets frozen puff pastry, defrosted, (2 pkg)
- fleur de sel for sprinkling or sea salt
Egg and Avocado on Toast

- Peel and pit 2 ripe avocados smash with a fork in a bowl.
- Fold in 1/4 cup goat cheese
- 1 tbsp lime juice
- 1/4 tsp salt and pepper, each
- Spread onto 4 slices of toast.
- Slice 3 hard cook eggs into 4 wedges each.
- Arrange over avocado spread. Scatter 2 tbsp crumbled goat cheese over toast, then season with 1/4 tsp salt and pepper.
Peanut Butter and Oatmeal Dream Bars-Five Stars

Preheat oven to 350. Line a 9×13 pan with tin foil and spray lighlty with PAM
- 1 cup melted butter
- 1 cup brown sugar (I used Dark brown sugar)
- 1 teaspoon baking soda
- 2 1/4 cups Quick Cooking oatmeal (NOT instant)
- 1 1/2 cups flour
- 1 teaspoon salt
- 1/2 cup peanut butter (I used creamy)
- 1 can sweetened condensed milk
- 1 King size Reese’s Peanut Butter Cup candy bars, roughly chopped
- 1 cup Milk Chocolate Chips

- 2 skinless, boneless chicken breast halves, cubed
- 3 tablespoons chopped onion
- 3 cloves garlic, minced
- 3 cups fresh spinach
- 1 1/2 cups ricotta cheese
- 1/2 cup grated Parmesan cheese
- 6 tablespoons butter, softened
- 3 (10 ounce) cans refrigerated crescent roll dough
