  • 1 1/2 cups small diced leeks,
  • 1/3 cups creme fraiche
  • 4 ounces smoked ham, such as black forest, cut into 1-inch dice.
  • 4 ounces Gruyere cheese, grated
  • 2 ounces (2 cups) baby spinach, chopped
  • 2 tbsp julienne basil leaves
  • 1/2 cup grated Parmesan cheese
  • kosher salt and pepper
  • 1 large egg
  • 2 tbsp milk
  • all-purpose flour, for rolling
  • 3 sheets frozen puff pastry, defrosted, (2 pkg)
  • fleur de sel for sprinkling or sea salt

  • Peel and pit 2 ripe avocados smash with a fork in a bowl.
  • Fold in 1/4 cup goat cheese
  • 1 tbsp lime juice
  • 1/4 tsp salt and pepper, each
  • Spread onto 4 slices of toast.
  • Slice 3 hard cook eggs into 4 wedges each.
  • Arrange over avocado spread. Scatter 2 tbsp crumbled goat cheese over toast, then season with 1/4 tsp salt and pepper.
