Sugar and Nut Glazed Brie

In a small bowl stir together the sugar, nuts, and brandy
- 1/4 cup packed brown sugar
- 1/4 cup chopped macadamia nuts or pecans
- 1 tablespoon brandy
- 1 (14-ounce) round brie
- Apple wedges, for serving
- Pear wedges, for serving
- 2 to 3 tablespoons lemon juice
- Crackers, for serving
Mixed Veggie Stir-fry

Put the red pepper and onion in the ActiFry pan and drizzle the vegetable oil over them
- 1 red pepper, thinly sliced,
- 1 red onion, thinly sliced,
- 1 ActiFry spoon vegetable oil,
- 1 lb frozen baby corn cobs, thawed,
- 9 oz carrots, in strips or thin slices,
- 9 oz mixed mushrooms, sliced,
- 1 cup sliced bamboo shoots, drained and washed,
- 2 cloves garlic, peeled and minced,
- 1 pinch ground cardamom,
- 1 ActiFry spoon reduced-salt soy sauce,
- Dash Cayenne pepper sauce (optional),
- 1 cup vegetable broth,
- 1/2 ActiFry spoon cornstach,
- 1 shallot, thinly sliced (optional)
Toasted Oat Granola

Preheat oven to 375°. Line a baking sheet with parchment paper or coat with nonstick spray
- TOAST:
- 21/2 cups old-fashioned oats
- 3/4 cup slivered almonds
- 11/4 tsp. ground cinnamon
- 1 tsp. kosher salt
- COMBINE:
- 1 cup dried cherries (or any
- combination of dried fruit)
- cup sweetened shredded
- coconut
- 1/2 cup packed brown sugar
- STIR IN:
- 1/2 cup pure maple syrup
Peanut Butter Fritters

- 3/4 cup flour
- 1/3 cup packed brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon baking soda
- 1/4 cup buttermilk
- 3 tablespoons creamy peanut butter
- 1 large egg
- 1 teaspoon pure vanilla extract
- Peanut oil, for frying
- Whipped cream and raspberry jam, for serving

Endive Spears with Herbed Goat Cheese

- •4 ounces fresh goat cheese, softened
- •3 tablespoons heavy cream
- •2 teaspoons extra-virgin olive oil, plus more for drizzling
- •1 teaspoon chopped fresh dill, plus sprigs for garnish
- •2 heads Belgian endive, leaves separated (about 24 leaves)
- •Cracked black pepper

Peach Mango Margaritas

In a food processor, puree the mango and peaches
- 1 ripe mango, peeled, seed removed and diced
- 2 medium ripe peaches, pitted and diced
- 4 ounces tequila
- 3 ounces Triple Sec
- 1/2 cup limeade (can sub lime juice plus 1/4 cup of sugar, premixed)
- 4 About 4 trays ice cubes
