BEETS AND HERBS SALAD

amanda's Notes: Isn't it time to take a break from roasted beets with goat cheese? I thought so
- 1 1/2 pound baby beets (weighed after trimming)
- 4 tablespoons olive oil
- 2 teaspoons each chopped basil, tarragon, chives and mint
- 1 teaspoon Dijon mustard
- 1 tablespoon sherry vinegar
- Freshly ground black pepper
Chickpea Nibble

1.Preheat oven to 300 degrees
- •1 can (19 ounces) chickpeas
- •2 tablespoons extra-virgin olive oil
- •1/2 teaspoon coarse salt
- •1 pinch of freshly ground pepper
- •1/2 teaspoon garam masala, dried oregano, or ground cumin
KNORR SPINACH DIP

Combine all ingredients and chill about 2 hours
- 1 package (10 oz.) baby spinach, chopped or 1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
- 1 container (16 oz.) sour cream
- 1 cup Hellmann's® or Best Foods® Real Mayonnaise
- 1 package Knorr® Vegetable recipe mix
- 1 can (8 oz.) water chestnuts, drained and chopped
- 1 red onion, chopped
Mini Florentine Cups

Heat oven to 350°F. Mix all ingredients except turkey
- 1 pkg. (10 oz.) frozen chopped spinach, cooked, well drained
- 1/2 cup shredded mozzarella cheese
- 1/3 cup cream cheese
- 1 Tbsp. parmesan cheese
- 1 Tbsp. finely chopped onions
- 1/4 tsp. garlic powder
- 24 slices oven roasted turkey breast
Chicken Stuffed Peppers - South Beach Diet Recipe (Phase 2)

Prepare peppers for stuffing
- 2 cups boneless skinless chicken breast (cooked and chopped)
- 2 red bell peppers
- salt and pepper
- 1/2 cup onion (chopped)
- 1 medium zucchini (chopped)
- 3/4 cup part skim milk mozzarella cheese (shredded)
- 4 tablespoons parmesan cheese (grated)
- 2 tablespoons boursin light cream cheese
- 3 cloves garlic
- all purpose herb seasoning
- Sauté garlic, onion and zucchini
Salsa Verde

1.Bring a large pot of water to a boil; add salt
- Coarse salt
- 12 tomatillos, (about 2 1/4 pounds), husks removed, rinsed well
- 2 cloves garlic
- 1 1/2 ounces fresh cilantro, (about 1/4 bunch), stems included
- 1 jalapeno chile, ribs and seeds discarded, flesh coarsely chopped
- 1 small white onion, finely chopped
- Freshly ground pepper
Bloomin' Onion Petals with Dipping Sauce

Put flour in one medium bowl, milk in a second larger bowl, and all other ingredients in a third large bowl
- Breading:
- 1 large onion
- 1 egg
- 1 cup milk
- 1 cup flour
- 1 1/2 tsp. salt
- 1 1/2 tsp. cayenne
- 1/2 tsp. pepper
- 1 tsp. paprika
- 1/4 tsp. oregano
- 1/8 tsp. thyme
- 1/8 tsp. cumin
COLD CUCUMBER SALAD

Peel and slice the cucumbers and put them in a glass bowl
- 1 tablespoon fresh dill
- 1/4 cup sour cream
- 1/2 cup mayonnaise
- 1 teaspoon vinegar
- 1 teaspoon salt
- 2 cucumbers
- Fresh ground pepper
Baked Triple Veggie Dip

Mix all ingredients together, reserving ¼ cup of cheese
- 1 can asparagus spears, chopped
- 1 10 ounce pkg. frozen chopped spinach
- 1 8.5 ounce can artichoke hearts, chopped
- 1 8 ounce pkg. cream cheese
- 1/2 cup mayo
- 1 1/2 cups parmesan cheese

- 1 cup pitted green olives

- cup balsamic vinegar
- 4 cloves garlic, minced

- 2 teaspoons snipped fresh oregano

- teaspoon cracked black pepper
