- 4 medium zucchini-about 4 cups
- 2 garlic cloves--peeled and smashed
- 2 Tbs olive oil
- 1/2 tsp dry thyme
- zest from 1 lemon
- juice of 1/2 lemon
- salt and pepper to taste
