Shrimp; Curry-rubbed Grilled Shrimp with Minted Yogurt

The citrus minted yogurt sauce is a bright contrast to the smoky curried shrimp
- Sauce:
- 1/2 cup plain yogurt
- 1/4 c coarsely chopped mint
- 3 T fresh lime juice
- Shrimp:
- Toss Together: Add:
- 1 lb Shrimp (16-20 count, peeled, deveined, tails intact
- 2 T toasted sesame oil
- 3 T curry powder
- salt and coarsly ground pepper

This chili has several histories
- 1 cup pinto beans
- 5 cups tomatoes
- 2 cloves garlic
- 1 pound chopped green peppers (about 3 cups)
- 1/2 pounds chopped onions (4 cups)
- 1 1/2 tsp salad oil
- 1/2 cups chopped parsley (fresh)
- 1 lb ground pork and 2 1/2 pounds ground beef or just use 3 lbs ground beef
- 1/3 cup chili power
- 1/2 butter (I don't use that much)
- salt
- pepper
- 1 1/2 tsp cumin
- calls for msg which i never use
Grilled Vegetable Salad

Directions: Grill the vegetables Prepare a gas or charcoal grill for direct grilling over high heat
- Ingredients:
- Topped with crumbled goat cheese, this medley of summer vegetables makes a delicious main-course salad.
- 1 large or 2 small eggplant, cut lengthwise into
- thick slices
- 3 yellow summer squash, such as crookneck or
- yellow zucchini, cut lengthwise into thick slices
- 1/4 cup plus 3 Tbs. olive oil
- Salt, to taste, plus 1/4 tsp.
- Freshly ground pepper, to taste
- 1/2 tsp. dried oregano
- 1 Tbs. balsamic vinegar
- 1 tsp. Dijon mustard
- 4 tomatoes, cored and quartered
- 3 oz. mixed baby greens
- 2/3 cup fresh goat cheese, crumbled
Happy Salad w/ Asparagus, Avocado, Mint & Lime

Whisk your dressing in a small bowl with a fork and set aside
- Happy Salad w/ Asparagus, Avocado, Mint & Lime:
- handful of baby arugula leaves
- 1 avocado (for 2 salads), cut in half & cubed
- as much fresh asparagus as you can pick (and I mean from the plant)
- 1 tbsp fresh mint, minced very fine
- Dressing:
- zest & juice of 1 lime
- 6 tbsp olive oil
- 1 tbsp white balsamic vinegar
- pinch of kosher salt

- 1/4 cup small-diced onions
- 1/4 cup small-diced celery
- 1/4 cup small-diced green bell peppers
- 2 ounces tasso ham, julienned
- 1 tablespoon creole seasoning (Clime likes Paul Prudhomme’s)
- 7 large shrimp, peeled and deveined
- 1 ounce sherry
- 1/4 cup heavy cream
- 1 tablespoon butter
- For the grits:
- 3 cups chicken stock
- 3 cups milk
- 1 cup grits (Acadiana uses Hoppin’ John’s)
- 1/2 cup grated cheddar cheese

Directions: In a bowl, whisk together the lime juice, ground cumin and chili powder
- * Juice of 3 limes
- 2 * 2 tsp. ground cumin
- 1 * 1 tsp. mild chili powder
- 3/4 * 3/4 cup extra-virgin olive oil, plus more
- for brushing
- * Coarse salt and freshly ground pepper, to taste
- 6 * 6 ears of corn, husks and silks removed
- 3 * 3 cups cherry tomatoes, stemmed and halved
- 1/2 * 1/2 cup diced red onion
- 1/2 * 1/2 cup chopped fresh cilantro
- 1/4 * 1/4 lb. feta cheese, diced
- 2 * 2 tsp. cumin seeds, toasted and lightly crushed
Grilled Teriyaki Chicken with Chile Orange Compote

Marinate the breasts for 1-2 hours in half of the teriyaki sauce, turning at least once
- Teriyaki
- 1 1/2 cups soy sauce
- 1 cup sake or mirin
- 1/2 cup sugar
- 1/3 cup ginger, minced
- 8-10 chicken breasts, skin on
- Compote
- 14 oranges, segmented
- 1 tsp. chile oil or sambal
- 2 Tbsp. ginger, minced
- 2 Tbsp. sesame seeds
- 1 1/2 jalapeños, chopped
- 2 tsp. sesame oil
- 1 Tbsp. honey
- 1/4 cup cilantro, chopped plus more to garnish
Lime and Green Onion Rice

Heat the oil in sauce pot over medium to medium-high heat
- 1 * 1 tablespoon vegetable oil
- 1 1/4 * 1 1/4 cups light brown rice (recommended: Texmati) or white rice
- 2 * 2 limes, zested, 1 lime, juiced
- 2 * 2 cups chicken stock
- 3 to 4 * 3 to 4 thin scallions, whites and greens, chopped

- 9 c oatmeal
- 4 t baking soda
- 1 t salt
- 1 lb m&ms
- 1 lb choc chips
