Chicken Kabobs with Grilled Onions

Spray a grill rack with nonstick, nonflammable cooking spray
- 3 cloves garlic, chopped
- 2 tablespoons soy sauce
- 2 tablespoons lemon juice
- 2 tablespoons teriyaki sauce
- 2 tablespoons olive oil
- 2 tablespoons Worcestershire sauce
- Pinch pepper
- Pinch salt
- 1 pound chicken tenders, cut in half
- 1 bunch green onions
- Special equipment: 10 wooden skewers, soaked in water for 30 minutes
Black Bean Tacos with Corn Salsa

- Olive oil cooking spray
- 2 cloves garlic
- 2 1/2 cups canned black beans, rinsed and drained
- 1/4 cup rolled oats
- 1/4 cup cornmeal
- 1 tablespoon chili powder
- 1 teaspoon kosher salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 8 small corn tortillas
- 1 cup corn, thawed if frozen
- 1 medium red bell pepper, chopped
- 1 small green chile, diced
- 2 scallions, chopped
- Juice of 2 limes
- 1/4 cup chopped fresh cilantro
Basmati Rice Salad

Salad: Cook rice and let cool completely
- DRESSING:
- SALAD
- 1 cup basmati rice cook as directed
- 1 clove garlic (crushed with press)
- 1/4 cup cilantro lime dressing
- 1/2 cup low fat plain yougurt
- 1/2 tsp ground coriander
- 1/4 tsp ground cumin
- 1/4 tsp salt
- 4 cups baby spinach
- 1 cup frozen peas, thawed
- 1 lg ripe mango
- 3 tsp sliced almonds

- sesame seeds
- 1 sm pablano
- cilantro
- 1 /c cup fresh lime juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 cup veg oil
Provencal French Beans

Directions Place the beans in a bowl and cover with water

- 14 ounces dried Great Northern beans
- 1 quart homemade chicken stock or canned broth
- 1 tablespoon kosher salt
- 1/4 cup good olive oil
- 2 cups chopped yellow onions (2 onions)
- 1 cup medium-diced carrots (2 carrots)
- 1 cup medium-diced celery (2 stalks)
- 1/4 cup fresh chopped parsley, plus extra for garnish
- 1 tablespoon minced garlic (3 cloves)
- 2 tablespoons minced fresh rosemary
- 2 tablespoons minced fresh thyme
- 1/3 cup freshly grated Parmesan cheese
Cobbler

The cobbler shown is blackberry, but any fruit will work
- 1/2 c unsalted butter, melted
- 1 cup all purpose flour
- 2 cups sugar
- 3 teaspoons baking powder
- pinch salt
- 1 cup milk
- 4-6 cups fruit
- 1 tablespoon fresh lemon juice
- cinnamon and/or nutmeg depending on fruit

- 1 teaspoon paprika
- 1 teaspoon ginger
- 1 teaspoon fresh ground black pepper

- 1 teaspoon chili powder
- 1 pinch cayenne pepper
- 4 tilapia filets, thawed
DiGrassie's Spaghetti Sauce

This is the real thing, DiGrassie's original recipe-a variation of what is served at the restaurant
- 1/2 Cup Olive Oil
- 1 small onion, minced
- 1 pound ground chuck
- 2 cloves garlic, minced
- 8 oz sliced mushrooms, undrained
- 1/4 cup finely chopped parsley
- 1 8oz can tomato sauce
- 1 14.5 lb can diced tomatoes (Everyone is running over with tomatoes right now so I am using fresh)
- 1 6 oz can tomato paste
- 1 tsp salt
- ground pepper
- 1/4 tsp sugar
- 1 tsp dried basil
- 1 cup red wine

- 2 Japanese eggplant, halved lengthwise
- 2 red bell peppers, stemmed, seeded and quartered
- 2 yellow bell peppers, stemmed, seeded and quartered
- 2 red onions, quartered
- 1 pint cherry tomatoes
- 1/2 cup olive oil, plus 2 tablespoons

- 4 cloves garlic, finely chopped
- 2 tablespoons finely chopped fresh oregano leaves

Roasted Pumpkin with Shallots and Sage

Directions Preheat oven to 450 degrees
- 1 medium sugar pumpkin (about 4 pounds), peeled, seeded, and cut into 2-inch chunks
- 4 shallots, peeled and quartered lengthwise
- 3 tablespoons olive oil
- 1/4 cup fresh sage leaves
- Coarse salt and ground pepper
Creamy Tomatillo Salad Dressing

.Remove large cilantro stems, then wash leaves and spin dry or dry with paper towels
- 2 cups prepared Ranch Dressing (I usually use a packet of Hidden Valley Ranch buttermilk mix, but you can make your own dressing if you prefer)
- 1 small bunch cilantro, large stems removed (about 1/2 cup chopped cilantro)
- 2 large or 4 small tomatillos
- 1/2 tsp. minced garlic
- 2 T fresh lime juice
- 1 tsp. Green Tabasco sauce or 1 diced jalapeno pepper
- Prepare Ranch dressing according to directions on the package or recipe you're following and set aside
