Broccoli Rabe Panini with Mozzarella

1. Remove and discard broccoli rabe's heavy stems
- 1 lb. broccoli rabe
- 1 T. butter
- 1 T. olive oil
- 1/2 medium onion, diced small
- 1 med. garlic clove, minced
- Pinch of red pepper flakes
- 4 slices of ciabatta bread
- 1/4 lb. mozzarella, thinly sliced
Chicken Biscuit Pie

1. Preheat oven to 450 degrees F (230 degrees C)
- 1/3 cup butter
- 1 onion, chopped
- 1/3 cup all-purpose flour
- 1 1/2 cups chicken broth
- 2/3 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 c. frozen mixed vegetables
- 1 c. diced carrots, celery, etc.
- 2 cups cooked, shredded chicken meat
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 5 tablespoons shortening
- 3/4 cup milk
Pita Tostadas with Butternut Squash, Black Beans, and Avocado

1. Preheat oven to 400 degrees
- 1 butternut squash, split vertically and seeds removed
- extra-virgin olive oil
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- kosher salt, to taste
- 1 tablespoon maple syrup
- 4 pita breads (6-inch)
- 1 can black beans, rinsed and drained
- juice from 2 limes, divided
- 1/4 cup greek yogurt
- 2 avocados, sliced
- garnish: chopped cilantro and toasted pumpkin seeds

- 1 (12 oz) pkg chocolate chips
- 2/3 cup half and half
- 1/2 cup sugar
- 1 tsp vanilla
Eggplant Parmesan

1.) Cut unpeeled eggplant crosswise into 1/4 inch slices
- 1 medium eggplant
- 2 eggs
- 1/4 c. water
- 1/3 c. flour
- 1 c. bread crumbs
- 1 jar marinara sauce
- 8 oz sliced mozzarella cheese
- 1/4 c. grated parmesan cheese
No-Knead Cinnamon Rolls

Melt the butter in the microwave and set aside to cool
- Buns:
- 1 c. + 2 T. + 1 tsp milk
- 1 tsp active dry yeast
- 2 1/4 c. bread flour
- 1/2 tsp. salt
- 1/4 c. sugar
- 2 T + 2 tsp butter
- 1 room temp egg, lightly beaten
- Filling:
- 1/2 c. brown sugar, packed
- 2 T. ground cinnamon
- 1 T. flour
- 1/4 c. butter, at room temp
- Frosting:
- 4 oz whipped cream cheese (about a cup)
- 2 T. butter, at room temp
- 1/4 c. sugar
Refrigerator Dill Pickles

1. Stir water, vinegar, sugar, and sea salt together in a saucepan over high heat
- 3 1/2 cups water
- 1 1/4 cups white vinegar
- 1 tablespoon sugar
- 1 tablespoon sea salt
- 4 cups cucumber spears
- 2 cloves garlic, whole
- 2 heads fresh dill
Mint Bulgur Wheat and Peach Salad

1.) Combine boiling water and bulgur in a large bowl; let stand 1 hour or until water is absorbed
- 2 c. boiling water
- 1 c. uncooked bulgur wheat
- 3 T lemon juice
- 2 T lime juice
- 2 T extra virgin olive oil
- 1 T honey
- 1/2 tsp salt
- 2 c. diced, peeled peach (about 2 medium)
- 2 c. diced, peeled jicama
- 1/4 c. mint
M & M cookies

1. Blend shortening and sugars in large bowl
- 1 cup shortening (oil)
- 1 cup brown sugar
- 1/2 cup sugar
- 2 tsp vanilla
- 2 eggs
- 2 1/2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups plain M&M's
Chimichurri Sauce

Put the parsley, mint, capers and garlic in a food processor and pulse to combine
- 1 bunch parsley
- 6 - 8 mint leaves
- 1 1/2 T. capers
- 1 garlic clove
- 3/4 T. red wine vinegar
- 3/4 tsp. salt
- 1/4 tsp red pepper flakes
- 1/4 tsp ground black pepper
- 1/4 cup olive oil
