Sweet Potato Enchilada Stack

1.) In a large microwave-safe bowl, combine sweet potato and water
- 1 large sweet potato, peeled and cut into 1/2-inch cubes
- 1 T water
- 1 lb ground beef
- 1 medium onion, chopped
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) enchilada sauce
- 2 tsp chili powder
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 3 flour tortillas (8 inches)
- 2 cups (8 oz) shredded mexican cheese
Cole Slaw

1. Combine the coleslaw mix and onion in a large bowl
- 1 (10 oz) bag coleslaw mix
- 1 (8 oz) bag broccoli slaw
- 2 T. diced onion
- 2/3 c. mayo
- 3 T. vegetable oil
- 1/2 c. white sugar
- 1 T. white vinegar
- 1/4 tsp. salt
- 1/2 tsp. celery seeds

1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned
- 1 pound sweet Italian sausage
- 3/4 pound lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6.5 ounce) cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seeds
- 1 teaspoon Italian seasoning
- 1 tablespoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles
- 16 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 3/4 pound mozzarella cheese, sliced
- 3/4 cup grated Parmesan cheese
Skillet Egg Bruschette

Preheat the oven to 350 F
- 1 T. olive oil
- 1 c. diced potato, skin on
- 1/4 tsp red pepper flakes
- 1 c. diced zucchini
- Kosher salt and freshly ground black pepper
- 1/4 c. diced pecorino cheese
- 1 T. chopped oregano (1/2 T. dried oregano)
- 1/2 c. diced bacon
- 1 T. minced garlic
- 12 cremini mushrooms, cut into quarters

Panzanella with Marinated Chickpeas and Chimichurri

Preheat your oven to 350 degrees
- Marinated Chickpeas:
- 1 (15 ounce) can chickpeas, drained and rinsed
- 3 tablespoons olive oil
- 2 tablespoon red wine vinegar
- 2 tablespoons chopped fresh basil
- 2 teaspoons honey
- 2 garlic cloves, minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon crushed red pepper flakes
- Chimichurri:
- 1 cup fresh cilantro
- 2/3 cup fresh parsley
- 1/4 cup fresh oregano
- 2 garlic cloves, minced
- 1/4 cup red wine vinegar
- 2/3 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon crushed red pepper flakes
- Salad:
- 2 cups thick italian bread cubes

- Chili Lime Chicken:
- 1 lb chicken breasts pounded to 1/2 inch thickness
- Chili Lime Rub:
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1-4-1/2 teaspoon chipotle chili powder (optional for more heat)
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon brown sugar
- fresh-squeezed lime juice from 1 lime (about 2 tablespoons)
- Lime zest from 1 lime
- Grilled Pineapple Salsa:
- 1/2 ripe pineapple, trimmed and sliced
- 1 large red bell pepper, seeded and quartered
- 1/2 small red onion, peeled and cut in half (so you have 2 quarters of whole onion)
- 1 whole jalapeno
- 1 tablespoon lime juice
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cumin
- salt and pepper to taste

- 1/2 cup favorite cheese, more or less
- Avocado Crema:
- 1 medium avocado
- 1/2 cup sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 1/4 teaspoon garlic powder
Chocolate Silk Pie

Crust 1. Preheat oven to 350
- Chocolate Crust
- 1 1/2 cups chocolate wafer crumbs
- 2 T. sugar
- Pinch of salt
- 5 T unsalted butter, melted
- Filling
- 12 T. (1 1/2 sticks) butter at room temperature
- 1 cup sugar
- 3 oz unsweetened chocolate, melted and cooled
- 3 large eggs
- 1 tsp vanilla extract
- Garnish
- 1 cup heavy or whipping cream
- 1 T. sugar
- Chocolate curls shaved from a bittersweet bar with peeler (optional)
Blueberry Broccoli Spinach Salad

- 1/4 cup blueberries
- 2-4 TBSP dried cranberries

- 1 tsp chopped fresh oregano

- 2 T olive oil
- 2 T balsamic vinegar
- Salad:
- 3/4 c. coarsely chopped cucumber
- 3/4 c. coarsely chopped yellow or green bell pepper
- 1/4 c. sliced green onions
- 1 med tomato, seeded and chopped
- 1 (15 oz.) can chickpeas
Pan Fried Halibut with Remoulade

- 1 T chopped fresh parsley
- 2 T mayo
- 1 tsp chopped capers
- 1 tsp Dijon mustard
- 1/2 tsp minced garlic
- 1/2 tsp lemon juice
- 1/4 c. flour
- 1/2 c. panko
- 1 large egg white, slightly beaten
- 2 (6 oz) skinless halibut fillets
- 1/4 tsp salt
- 1/4 tsp garlic powder
