Eggplant Parmesan

Ingredients
- 1 medium eggplant
- 2 eggs
- 1/4 c. water
- 1/3 c. flour
- 1 c. bread crumbs
- 1 jar marinara sauce
- 8 oz sliced mozzarella cheese
- 1/4 c. grated parmesan cheese

Preparation
Step 1
1.) Cut unpeeled eggplant crosswise into 1/4 inch slices.
2.) In a bowl, beat together eggs and water.
3.) Coat eggplant slices in flour and dip in egg mixture, then coat with breadcrumbs.
4.) In skillet, cook eggplant in small amount of oil, turning once, drain on paper towel.
5.) In bottom of baking dish, spread 1/2 c. sauce, layer 1/2 eggplant slices, 1/2 cheese and 1/2 sauce. Repeat layers. Sprinkle with parmesan cheese. Bake uncovered at 350 for 20-30 minutes.
