Crostini with Blue Cheese and Hazlenuts

Toast hazelnuts. Place hazelnuts and cheese on toasted baguette or endive leaf
- 1/2 cup hazelnuts, toasted
- 1 baguette
- honey
- 3 oz. gorgonzola or roquefort
- optional: endive leaves
Shrimp Piri Piri

Heat oven to 500 degrees F and arrange rack in upper third
- 3 medium serrano chiles
- 4 medium cloves garlic
- 1 tablespoon paprika
- 1/4 cup freshly squeezed lime juice
- 1 tablespoon red wine vinegar
- 1/3 cup olive oil
- 1 1/2 pounds uncooked, deveined, and peeled shrimp, tails left on (about 40)
- Salt
- 1/3 cup roughly chopped fresh cilantro leaves
- Lime wedges, for serving
- White rice, for serving
Indian Spiced Chicken

Heat oven to 400° F. Cut each thigh in half
- 1 1/2 pounds boneless, skinless chicken thighs
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil, plus more for the dish
- 1 medium yellow onion, thinly sliced
- 2 carrots, diced
- 1 clove garlic, finely chopped
- 2 1/4 cups low-sodium chicken broth
- 1/4 teaspoon ground cinnamon
- 1 tablespoon finely grated ginger
- 1/2 cup plain whole-milk yogurt
- 1/2 cup golden raisins
- 1/2 cup toasted almonds, chopped
- 1 cup basmati rice
- 6 to 12 sheets phyllo dough, thawed (optional)

Very Berry Smoothies

- 1 pint fresh strawberries, well chilled
- 1 pint fresh blueberries well chilled
- 1 pint frozen raspberries, partially thawed
- 1 1/2 cups plain low-fat yogurt, well chilled
- 1/2 cup cranberry juice, well chilled

Prosciutto Wrapped Egg Muffins | Nom Nom Paleo

I preheated the oven to 375°F and prepped my veggies
- 4 tablespoons fat (coconut oil, ghee, etc.)
- 1/2 medium onion, finely diced
- 3 cloves of garlic, minced
- 1/2 pound of cremini mushrooms, thinly sliced
- 1/2 pound frozen spinach, thawed and squeezed dry
- 8 large eggs
- 1/4 cup coconut milk (the fatty stuff at the top of the can works best)
- 2 tablespoons of coconut flour
- 1 cup of cherry tomatoes, halved
- 5 ounces of Prosciutto di Parma
- Kosher salt
- Freshly ground pepper
- A regular 12 cup muffin tin

- 2 garlic cloves, minced
- 4 skinless, boneless chicken breasts, about 2 lbs. total
- 1 large apple, cored, peeled, and cut into large chunks
- 1 large onion, cut into large wedges
White Cheddar Puffs with Green Onion

Broccoli and Cheese Smashed Potatoes

Halve the potatoes and add to a large pot
- 1 1/2 pounds small potatoes (recommended: Yukon gold)
- 1 small head broccoli
- 1 cup whole milk
- 2 tablespoons butter
- 1 1/2 cups shredded sharp Cheddar
- Salt and freshly ground black pepper
