Marinated Grilled [Turkey]

1. In a resealable plastic bag, marinate turkey & refrigerate 8 hrs or overnight, turning occasionally
- 3 lbs boneless skinless turkey breasts

Mango Lassi

1. Combine all the ingredients, except the sugar in a blender
- 2/3 c Greek-style yogurt
- 1/3 c milk
- 1 ripe mango, pitted, peeled & chopped
- 5 ice cubes
- sugar or honey to taste (optional)
Turkey & [Brown Rice] Salad

I substituted brown rice for barley
- 3/4 c brown rice
- 2 c baby arugula
- 2 c roasted turkey, shredded
- 1/2 c dried cranberries
- 3 T EVOO
- 2 T fresh lemon juice
- salt & pepper
Sparkling Pineapple Ginger Ale

In a pitcher, combine the ginger ale and pineapple juice
- 1 12-ounce can ginger ale
- 1 1/2 cups pineapple juice
- 4 pieces fresh pineapple, cut into triangles
Fruit-Topped Cake

- 1 1/4 cups cake flour (not self-rising)
- 1 tsp. baking powder
- Pinch salt
- 1 stick butter
- 10 Tbsp. sugar
- 1 large egg
- 3 (1 pound) large ripe black plums, pitted, quartered, each quarter cut into 3 slices (or use ripe peaches or peeled Granny Smith apples)
- 1 tsp. lemon juice
- 1/8 tsp. ground cinnamon

1. Using a sharp knife, cut top & bottom ends off honeydew & cantaloupe
- 1 honeydew
- 1 cantaloupe
- 1/4 watermelon, peeled & sliced
- 2 T honey
- 1 T fresh lemon juice
- 1 T mint leaves, sliced into thin ribbons
Raw Zucchini and Carrot Lasagna with Almond "Ricotta"

- 6 zucchini (about 2 3/4 pounds), trimmed and thinly shaved lengthwise into strips
- 2 large carrots , trimmed and thinly shaved lengthwise into strips
- 5 Tbsp. lemon juice (from about 2 lemons)
- 5 Tbsp. olive oil , divided
- 1 3/4 tsp. kosher salt , divided
- 3/4 tsp. freshly ground black pepper , divided, plus more to taste
- 1 1/2 cups raw slivered almonds
- 3 cloves garlic
- 2 bunches kale (about 2 pounds), ribs removed, leaves roughly chopped
- 1 cup lightly packed basil leaves (about 1 bunch)
- 2 Tbsp. nutritional yeast (optional)
- 3 cups baby spinach , cut into thin strips
- 3 mediium tomatoes , cored and roughly chopped
- 3 medium beets , preferably Chioggia (also called candy-striped) or yellow, peeled and very thinly sliced
- 1 fennel bulb , halved lengthwise, cored, and very thinly sliced
- Chopped chervil , or another favorite herb, for garnish

- 4 ounces good-quality vodka
Pumpkin-Spice Cupcakes with Maple Frosting

- 1/2 c vegetable oil, plus extra for greasing the pan
- 1 c all-purpose flour
- 1 t baking powder
- 1/2 t baking soda
- 1 t ground cinnamon
- 1/2 t ground ginger
- 1/2 t ground nutmeg
- 1/2 t kosher salt
- 2 extra large eggs, at room temperature
- 1 c canned pumpkin puree (not pie filling)
- 1/2 c granulated sugar
- 1/2 c light brown sugar, lightly packed
- Maple Frosting (see below)
- 1/2 c coarsely chopped Heath bars for serving (two 1.4oz bars)

- 6 oz cream cheese
- 3 T unsalted butter
- 2 T pure maple syrup
- 1/2 t pure vanilla extract
