Apricot, Ginger, and Walnut Tea Bread

- Vegetable-oil cooking spray
- 3 1/2 cups all-purpose flour
- 4 tsp. baking powder
- 1 tsp. kosher or sea salt
- 1/2 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/8 tsp. freshly grated nutmeg
- 11 Tbsp. (1 stick plus 3 Tbsp.) unsalted butter
- 1 1/3 cups sugar
- 4 large eggs at room temperature
- 2 cups mashed ripe bananas (4 to 5 bananas)
- 3/4 cup chopped toasted walnuts
- 1 cup finely chopped dried apricots , tossed with 1 Tbsp. flour to separate
- 1/3 cup diced crystallized ginger

Prep the crust. Unroll 1 pie dough round and press into the bottom of a 9-inch pie pan
- For the filling:
- 1 premade pie crust
- 2 Granny Smith apples, peeled, cored, and thinly sliced
- 8 ounces blueberries
- 1/2 cup golden raisins
- 1/2 cup dried cranberries
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon pumpkin pie spice
- Grated zest of 1 lemon
- 2 tablespoons all-purpose flour
- Kosher salt
- For the topping:
- 1 cup cinnamon-flavored granola mix
- 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter
- 1/4 cup packed light brown sugar

- 2 Granny Smith apple cores (apples reserved for salad)
- 2 Tbsp. mustard
- 1/2 cup champagne vinegar
- 2 shallots , chopped
- 1/2 bunch thyme
- 1 cup olive oil
- 2 tsp. salt
- 1 tsp. pepper
- Salad:
- 1 1/2 pounds jumbo lump Maine crabmeat
- 2 Granny Smith apples , julienned (cores reserved for vinaigrette)
- 1 avocado , cubed
- 8 bunches mache (if not available, substitute 5 1/2 ounces organic mixed greens)
- 1/2 bunch fresh chervil , chopped, for garnish
- Tuiles:
- 1 1/2 cups finely grated Parmigiano-Reggiano cheese

- 4 T Worchestershire sauce
- 4 T grated fresh ginger
