  • 4 tsp. baking powder
  • 1 tsp. kosher or sea salt
  • 1/2 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/8 tsp. freshly grated nutmeg
  • 11 Tbsp. (1 stick plus 3 Tbsp.) unsalted butter
  • 1 1/3 cups sugar
  • 4 large eggs at room temperature
  • 2 cups mashed ripe bananas (4 to 5 bananas)
  • 3/4 cup chopped toasted walnuts
  • 1 cup finely chopped dried apricots , tossed with 1 Tbsp. flour to separate
  • 1/3 cup diced crystallized ginger

  • 1 premade pie crust

  • 1 tablespoon fresh lemon juice
