[Turkey] with Curried Mango Sauce

1. Combine 2T EVOO, pineapple & lime juices, mangoes, garlic, cilantro, curry powder & 1/4t salt in a blender
- 1/4 c EVOO
- 1/3 c pineapple juice
- 1/4 c lime juice
- 2 mangoes, peeled & chopped
- 1 clove garlic, minced
- 2 T chopped cilantro (optional)
- 1/2 t curry powder
- 2.25 t salt
- 4 boneless, skinless [turkey] breasts
- 1 t black pepper
Whole Grilled Red Snappers

- 4 small whole red snappers (~1.25lbs each), gutted, scaled & gills removed
- 1/4 c light (reduced-sodium) soy sauce
- 2 T EVOO, plus more for drizzling on the cooked fish
- Juice of 1 lemon
- Coarse sea salt (such as Maldon)
- 10 scallions, white & light green part only
Spicy Candied Nuts

1. Preheat oven to 325F. Line a lg rimmed baking sheet w/parchment paper
- 1.5 c raw cashews
- 1.5 c raw pecans
- 1 c raw almonds
- 2 T + 2t turbinado sugar, divided
- 2 t sea salt, divided
- 2 t coarsely chopped rosemary
- 1/2 t cayenne pepper
- 1/8 t smoked paprika
- 1 T honey
- 1 T unsulphured molasses
- 1/2 t grated orange zest
Vegan Chocolate Chip Cookies

Try this delicious vegan version adapted from Kathleen King's Tate's Bake shop: Baking for Friends
- 1 c instant oatmeal
- 1/2 c whole wheat pastry flour
- 1/2 c coconut flour
- 1/2 t baking soda
- 1/4 t salt
- 3/4 c firmly packed dark brown sugar
- 1/3 c canola oil
- 1/4 c almond milk
- 2 t pure vanilla extract
- 1/2 c vegan semisweet chocolate chips (like Sunspire, $8; veganstore.com)
Orecchiette with Arugula and Walnut Pesto

1. Bring a lg pot of salted water to a boil
- 1/2 lb orecchiette pasta
- 3 T EVOO
- 1.5 med zucchini, trimmed
- 1 pt(2c) grape tomatoes
- 1/2 c arugula & walnut pesto
- 1/3 c fresh ricotta cheese
- 1 t grated lemon zest
- 1/2 t kosher salt
- 1/8 t freshly ground pepper
- 1/4 c grated Parmesan cheese
White Wine Mojito

- 1/2 cup walnuts
- 2 cups basil leaves, loosely packed
- 1 small clove garlic

- 3/4 cup olive oil
- 1 pound rigatoni
