Vegan Chocolate Chip Cookies

Ingredients
- 1 c instant oatmeal
- 1/2 c whole wheat pastry flour
- 1/2 c coconut flour
- 1/2 t baking soda
- 1/4 t salt
- 3/4 c firmly packed dark brown sugar
- 1/3 c canola oil
- 1/4 c almond milk
- 2 t pure vanilla extract
- 1/2 c vegan semisweet chocolate chips (like Sunspire, $8; veganstore.com)

Preparation
Step 1
1. Preheat oven to 350F.
2. Line 2 baking sheets w/parchment or silicone mats.
3. In a lg bowl, whisk together the brown sugar, oil, almond milk, & vanilla; pour mixture into the batter & stir until combined.
4. Stir in chocolate chips.
5. For each cookie, drop 2T of dough 2" apart onto the baking sheets.
6. Bake for 10-15 min.
