Ingredients

  • 1

    c instant oatmeal

  • 1/2

    c whole wheat pastry flour

  • 1/2

    c coconut flour

  • 1/2

    t baking soda

  • 1/4

    t salt

  • 3/4

    c firmly packed dark brown sugar

  • 1/3

    c canola oil

  • 1/4

    c almond milk

  • 2

    t pure vanilla extract

  • 1/2

    c vegan semisweet chocolate chips (like Sunspire, $8; veganstore.com)

Directions

1. Preheat oven to 350F. 2. Line 2 baking sheets w/parchment or silicone mats. 3. In a lg bowl, whisk together the brown sugar, oil, almond milk, & vanilla; pour mixture into the batter & stir until combined. 4. Stir in chocolate chips. 5. For each cookie, drop 2T of dough 2" apart onto the baking sheets. 6. Bake for 10-15 min.
