Easy chicken and rice

1)preheat oven to 350. Prepare rice according to package directions
- 1 10 oz package yellow rice mix
- 1 c chopped onion
- 1/2 c chopped green bell pepper
- 1/2 c chopped carrot
- 1 T olive oil
- 2 c chopped chicken
- 1 15 oz black beans(drained)
- 1 10 oz can diced tomatoes and green chilies(drained)
- 2 cups grated monterey jack cheese

Healthy Chicken Quesadillas

Cut up the chicken breast into bite sized pieces
- Ingredients:
- 1/2 - 1/2 chicken breast
- 1 - 1 whole wheat tortilla
- 1/2 - 1/2 cup fat free or low fat cheddar cheese
- 1/4 - 1/4 cup salsa (try getting low sodium)
- 1/2 - 1/2 cup chopped vegetables. Choose whatever you like! I prefer tomatoes, corn, green peppers, red peppers, green onion, and onion.
- 1/2 - 1/2 tsp cilantro
- 1/2 - 1/2 tsp lime juice

Spinach Pesto and Sausage Strata

- 6 ounces fresh spinach (6 cups packed)
- 1/3 cup jarred pesto
- Salt and pepper
- 3 eggs
- 2 cups half-and-half
- 2 ounces pecorino-romano, finely grated (1/2 cup)
- 3/4 cup sliced scallions
- 9 ounces italian sausage, casings removed
- 1 10 ounce loaf sourdough bread, sliced 1/2-inch thick
- 2/3 cup (5 oz) ricotta
- 2 cups coarsely grated fontina (6 to 8 oz)
Toasted Orzo Chicken Soup

In a medium size pot, bring the chicken stock and chicken to a simmer
- 4 cups chicken stock (32 ounces)
- 1 pound skinless, boneless chicken breast pieces or tenders
- 2 tablespoons butter
- 3/4 cup orzo pasta
- 2 tablespoons extra virgin olive oil (EVOO)
- 1 small zucchini, finely chopped
- 1 carrot, finely chopped
- 1/2 small red bell pepper, finely chopped
- 2 shallots or 1 small onion, finely chopped
- 2 cloves garlic, finely chopped

- 1 cup frozen peas
- 1/4 cup flat leaf parsley, finely chopped
