In a large bowl, combine the egg, garlic, oregano, kosher salt and pepper
- TZATZIKI SAUCE:
- 1 egg, lightly beaten
- 6 garlic cloves, minced
- 3 tablespoons dried oregano
- 1-1/2 teaspoons kosher salt
- 1 teaspoon pepper
- 1 pound ground lamb
- 1 pound ground beef
- 1 cup (8 ounces) plain yogurt
- 1 medium cucumber, peeled, seeded and chopped
- 2 tablespoons lemon juice
- 2 garlic cloves, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 whole pita breads
- 3 tablespoons olive oil, divided
- 16 slices tomato
- 8 slices sweet onion, halved

Banana Maple Granola

Preheat oven to 350 degrees F
- 2 cups old-fashioned oats
- 1/2 cup coconut flakes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon cinnamon
- 2 cups pecans, roughly chopped
- 1 ripe banana, mashed
- 2 tablespoons coconut oil
- 1/3 cup maple syrup
- 1 tablespoon brown sugar
- 1/4 teaspoon vanilla extract
Baked penne and turkey meatballs

1) Heat oven to 400. Line a baking sheet with nonstick foil
- 1 pkg ground turkey
- 2 c corn flakes
- 2 eggs, lightly beaten
- 3/4 t Italian seasoning
- 1/2 t salt
- 1/4 t black pepper
- 1 box (8oz) penne
- 1 jar marinara
- 1 1/2 c shredded mozzarella
Oatmeal Pancake Mix

Mix all the dry ingredients together in a mixer with a paddle (or by hand)
- 3 1/2 cups rolled (quick) oats
- 3 cups whole wheat flour
- 2 cups all-purpose flour
- 3 tablespoons sugar
- 3 tablespoons baking powder
- 1 tablespoon salt
- 1 tablespoon baking soda
- 1 cup vegetable or canola oil

- 1 (16 oz) package of Nutter Butter Cookies, chopped
- 6 cups rice krispie cereal
- 1/2 cup butter
- 2 (10.5 oz) bags mini marshmallows

Three Cheese Manicotti

- 8 dry manicotti shells
- 15-ounce container (2 cups) fat free ricotta cheese
- 4 ounces (about 1-1/4 cups) finely shredded low-fat
- mozzarella cheese
- 1/2 cup grated reduced-fat parmesan cheese, divided
- 2 egg whites
- 1 tablespoon finely chopped fresh parsley
- Â1/2 teaspoon garlic powder
- Salt, to taste
- Pepper, to taste
- 2-1/4 cups Nan's Marinara Sauce (see next page) or another low-fat marinara sauce

- 1 cup all-purpose flour
- 1 cup whole wheat pastry flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg
- 3/4 cup orange juice
- 1/4 cup canola oil
- 1 tablespoon grated orange peel
- 1/2 cup fresh or frozen blueberries
- 1/4 cup chopped pecans

- 1 cup applesauce
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
