- 1/2 teaspoon lemon zest, plus 3/4 tbsp lemon juice and 4 lemon wedges
- Salt and pepper
- 4 carrots, peeled and thinly sliced on an angle
- 1 tablespoon honey
- 4 skinless, boneless chicken thighs (about 1 1/4 lb)
- 1 10 ounce box couscous
Pumpkin upside down cake

Mix cake mix according to package directions and pour into greased 9 x 13 inch baking pan
- 1 pkg. yellow cake mix
- 1 can (15 oz.) pumpkin
- 1/2 cup sugar
- 1 cup sweetened condensed milk
- 2 eggs
- 2 tsp. pumpkin pie spice
Thai Pesto Shrimp

Preparation 1. Peel shrimp; devein, if desired
- Ingredients
- 1 1/2 * 1 1/2 pounds unpeeled, large raw shrimp (16/20 count)
- * Coconut-Lime Rice
- 1 * 1 cup loosely packed fresh cilantro leaves
- 3 * 3 tablespoons fresh lime juice
- 2 * 2 tablespoons unsalted dry-roasted peanuts
- 2 * 2 tablespoons minced fresh ginger
- 2 * 2 garlic cloves, minced
- 1 * 1 teaspoon kosher or 3/4 tsp. regular salt
- 2 * 2 teaspoons honey
- 1/2 * 1/2 teaspoon dried crushed red pepper
- 1/4 * 1/4 cup olive oil, divided
Skillet-Grilled burritos

1. Toss together first 4 ingredients and 1/2 cup Creamy Cilantro-Jalapeño Sauce
- 2 * 2 cups chopped cooked chicken breast
- 1 * 1 (15-oz.) can black beans, rinsed and drained
- 1 * 1 (11-oz.) can yellow corn with red and green bell peppers, drained
- 1 * 1 cup (4 oz.) shredded 2% reduced-fat Cheddar cheese

- 8 * 8 (8-inch) soft taco-size whole wheat flour tortillas, warmed

Easy Chicken Fried Rice

Whisk egg with 1 teaspoon oil in a small dish then set aside
- 2 cups prepared rice (I used long grain brown rice)
- 1 chicken breast, cut into bite-sized pieces and seasoned with salt & pepper (could use leftover cooked chicken)
- 1/2 cup frozen mixed vegetables
- 2 green onions, chopped
- 1 clove garlic, minced
- 1 egg
- 3 teaspoons sesame or wok oil, divided
- 2 Tablespoons soy sauce
Creamy Cilantro-Jalapeño Sauce

Stir together in a small bowl
- 1 c light sour cream
- 1/2 c loosely packed cilantro leaves
- 2 T diced pickled jalapeno peppers
- 2 T chopped yellow onion
- 2 t Dijon mustard
- 1 t lime zest
Salsa Verde chicken

1. Preheat oven to 350°. Prepare rice according to package directions
- 2 * 2 (3.5-oz.) bags boil-in-bag rice
- 2 * 2 ripe avocados
- 3/4 * 3/4 cup salsa verde
- 1 * 1 (4-oz.) can chopped green chiles
- 1 * 1 tablespoon fresh lime juice
- 2 * 2 cups chopped cooked chicken breast
- 1 * 1 (10 3/4-oz.) can reduced-fat cream of chicken soup
- 1 * 1 cup light sour cream
- 1 * 1 cup (4 oz.) grated Monterey Jack cheese
- 2 * 2 tablespoons chopped fresh cilantro
- * Topping: chopped tomatoes
Baked Pesto Chicken Parmasan

Preheat oven to 400 degrees
- 1 lb boneless skinless chicken thighs, about 8 (could use chicken breasts pounded thin then cut in half)
- salt & pepper
- 1/3 cup pesto
- 1 cup marinara sauce
- 8 oz fresh mozzarella cheese, sliced
French Toast Muffins

Whisk egg & milk with cinnamon and vanilla
- For the Cinnamon Streusel Topping:
- 1 loaf French bread, cut or torn into 1/2 inch cubes (about 10 cups of bread)
- 2 1/2 cups milk
- 6 large eggs
- 1/2 cup granulated sugar
- 1 tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup cold butter
- 1/4 cup light brown sugar
- 1/4 cup all-purpose flour
- 1/8 teaspoon ground cinnamon
- Pinch of salt
- Butter and Maple Syrup, for serving, optional
